@@Kryptix Providing great food and a healthy, diverse diet is a big part of being a parent. Kenji clearly values the scientific method and busting myths in favor of progress, which in my opinion is a rare-and great-quality. He also favors equality since he and his wife chose together to replace both of their last names with a hyphenated version. In this video he is wearing the bracelet his child made for him (even though it looks like a bracelet a child made), very likely to show her that he values her and values the act of kindness in giving a gift. All of these things tell me he is trying to be a great parent, and if provided with evidence on how to parent better I think he'd make a positive change. Plus, we don't know what 'random's dad is like. He could be a terrible dad (sorry if he isn't!).

He brings us what EVERY channel on youtube lacks: just cooking at home, enjoying ourselves, looking forward to the food we serve and the food you enjoy just moments after finishing. Kenji brings us the realest, the most direct content and we love it, because that´s what we do in times like these. He does it for the amateurs, for the semi pro cooks, for the industry and for the mothers, who cooked our first food. And it´s even better, if Kenji teaches us some things along the way. as a chemical engineer, i did an auditory version of a double take on hearing you talk about azeotropes! fun fact, the azeotrope is why everclear is 95%, and not higher. (this is also why you should never never drink 99% alcohol - the trace benzene in there will mess you up.)

Kenji, I think those japanese chives are the same as the garlic chives (allium tuberosum) often used in chinese food (called jiucai in mandarin/gau choy in cantonese - sometimes they are sun-deprived and yellow for certain stir fries). They are also the same plant as those chive flowers you've used in a few other videos.

Kenji I recommend storing miso in the freezer. It slows the microorganisms in the miso completely and prevents then from changing the flavor. Also, the moisture content is low so the miso will not freeze and the texture will be the same!

Once you put the beef and onion mix on the rice, it hit me what you were making. It's what I used to call a "beef bowl" when I was in Japan. I had no idea what the name of the dish was, but I knew that if I punched the right button on the ticket machine and gave it to the cashier, I'd get a delicious bowl of rice with beef, onions, and topped with a raw egg.

Cryssie G I’ve never commented but I’m always impressed with his confidence in how clean his sink is. I’d never do that in my sink, it’s a nuclear wasteland. Also it seems to me that if you forget to clean it after putting something that has raw chicken in it then you’re kind of screwing yourself when you reuse something.

I remember him recording a video years back with Alton Brown, where Alton trolled him for sticking his raw meat contaminated fingers back into the salt container without washing his hands. If anything, I think there are some bad restaurant habits coming into play here. But also, it probably doesn't actually matter that much in the grand scheme of things. I personally do not trust my sink or my counter usually.
