Kue Tok / Kue Ku
Bahan:
Bahan kulit:
300 gr tepung ketan
125 gr kentang
75 gr gula halus
240 gr santan + air (160 santan + 80 air)
1 sdt vanilla essence
½ sdt garam
Pewarna makanan secukupnya
Bahan isian:
250 gr kacang hijau kupas
200 gr santan + air (125 santan +75 air)
100 gr gula
1 sdt vanila essence
½ sdt garam
Cara membuat:
1. Untuk isian: rendam kacang hijau selama 2 jam. Lalu, kukus selama 30 menit
2. Haluskan kacang hijau kukus dengan blender
3. Masak kacang hijau yang telah dihaluskan dan semua bahan dengan api kecil
4. Masak sambil diaduk hingga kalis dan dapat dibentuk
5. Dinginkan isian kacang hijau terlebih dahulu, lalu bulatkan masing-masing seberat 17 gram
6. Untuk kulit: kukus kentang hingga lunak, lalu hancurkan dengan garpu
7. Campurkan kentang yang telah dihaluskan dengan tepung ketan, gula halus, santan + air, vanilla essence, garam. Kemudian, ulen hingga kalis
8. Tambahkan pewarna sesuai selera dan ratakan
9. Bulatkan adonan kulit seberat 33 gram, pipihkan
10. Beri isian kacang hijau, lalu bulatkan dan cetak
11. Letakkan di atas daun pisang
12. Kukus selama 15 menit.
Untuk sisa isian kacang hijau bisa disimpan di freezer. Isian ini bisa digunakan untuk onde-onde, bakpia, dsb.

Ingredients:
Skin ingredients:
300 gr glutinous rice flour
125 gr potatoes
75 gr powdered sugar
240 gr coconut milk + water (160 coconut milk + 80 water)
1 tsp vanilla essence
½ tsp salt
Food coloring to taste
Filling ingredients:
250 gr peeled green beans
200 gr coconut milk + water (125 coconut milk + 75 water)
100 gr sugar
1 tsp vanilla essence
½ tsp salt
Steps:
1. For the filling: soak the green beans for 2 hours. Then, steam for 30 minutes
2. Puree the steamed mung beans with a blender
3. Cook the pureed mung beans and all ingredients over low heat
4. Cook while stirring until smooth and can be shaped
5. Cool the mung bean filling first, then round each weighing 17 grams
6. For the skin: steam the potatoes until soft, then mash with a fork
7. Mix the pureed potatoes with glutinous rice flour, powdered sugar, coconut milk + water, vanilla essence, salt. Then, knead until smooth
8. Add coloring to taste and smooth
9. Round the skin dough weighing 33 grams, flatten
10. Add the mung bean filling, then round and mold
11. Place on banana leaves
12. Steam for 15 minutes.
For the remaining green bean filling, you can store it in the freezer. This filling can be used for onde-onde, bakpia, etc.
