Ingredients
Tender jackfruit - 1 or 2 nos
Shallots - 18 to 19 nos
Onion - 2 nos
Tomatoes - 2 nos
Green chilli - 3 or 4 nos
Garlic - 9 to 10 nos
Turmeric powder - 1 tbsp
meat masala- 1 tbsp
Garam masala - 1 tbsp
Coriander powder - 1 tbsp
Red chilli powder - 1 1 /2 tbsp
Salt - 2 or 3 tsp
Oil - 3 or 4 tbsp
Method
First we remove outer thorny green skin and cut the tender jackfruit into half and later
into medium size long pieces ,set aside.
Take a pan add chopped tender jackfruit ,salt ,turmeric powder and water ,mix
Cover and cook them well.
Remove the lid and saute them well.
Ones the tender jackfruit is well cooked ,drain and set aside.
Heat oil in a pan add cooked tender jackfruit ,saute for 5 to 6 minutes
Remove from excess oil and set aside.
Then add the shallots ,green chilli and garlic to the hot oil pan and saute them well.
Then add chopped onion and saute them well.
Now pour some coconut oil and saute them well.
Then add some curry leaves mix them well.
Add some spices like meat masala ,garam masala ,coriander powder and red chilli powder ,saute them well.
Then add turmeric powder ,saute them well.
Then add salt and mix them well.
Then add chopped tomatoes and saute till they become soften.
Then pour some water and combine them well.
Cover and cook for 5 to 6 minutes .
Add fried tender jackfruit and combine them well.
sprinkle some salt and mix them well.
Finally sprinkle some fennel powder and mix them well.
Remove from fire and keep aside.
Serve the Kerala style idichakka masala curry with healthy meals.
