A fermented fish sauce was also popular in Rome. It sounds gross but they added so much salt that the fish fermented rather than spoiling. They also strained out all the fish bits. The fish sauce from China eventually evolved into soy sauce which just replaced the fish with soy beans. Ketchup recipes were popular in the early days of America but they resembled Worcestershire sauce more than modern tomato ketchup. One recipe I found used mushrooms and was intended to flavor bland meat. It a way Tabasco sauce is more like these ancient ketchups because of how it’s prepared.

Soy sauce did not replace fish sauce. They are both used in modern Asian cuisines. They did find amphorae (jugs) of Roman fish sauce that had resting for centuries in the depths of the Mediterranean. They brought it to the surface and tried some. It was disgusting to modern European palates.

The Indonesian word "kecap" is not pronounced "kekap" (as Simon does), but "ketchap".

@@NickRoman "Oh no, different orthographies exist!" The point of letters is to write words down. That's it. Not sounds, words. Words, sentences, stories and such. If you want to write down sounds, use a phonetic alphabet like IPA or SAMPA. The point of phonetic alphabets is to write things exactly how they sound. The point of regular alphabets is to simply write them, it has very little to do with phonology.

Kecap (pronounced ketjap/kechap) nowadays is Indonesian soy sauce, particularly kecap Manis, a sweet soy sauce, is particularly well known over here in the Netherlands and is usually just referred to simply as ketjap (Dutch spelling of kecap).

Go to mexico, that's what we call it there. I always thought of ketchup as an american thing, since i would only see it on my trips to the US when i was a kid.

@@JRLB38 I'm from the same area, and growing up in the 1950s and '60s, I remember seeing both catsup and ketchup. But sometime after that, only ketchup. I recall that it was the same stuff, only a differentiation based on brand.

I seem to remember Heinz calling it ketchup and Hunt's calling it catsup. Since I don't like Hunt's, I never even pay attention to it in the store, so not sure how they spell it.

I accidentally found this in the search results of "mr. Burns ketchup catsup". Of course I watch that clip first but I'm glad to see this because actually what's weird is I've only heard of it being called catsup in that scene on The Simpsons and I recall my wife making jokes about just calling ketchup catsup, but what's really odd is I've never once seen a bottle at the store that actually says catsup instead of ketchup

Boiled tomato jam is the *_tits_* on so many things; it's a bittersweet, slightly tangy and spicy sauce that I've loved since I first tried my handmaiden, Phyllis' recipe. Thing is, it has to be used not long after it is made; it spoils if jarred or bottled because of the vinegar used being quick to turn to a not-so-edible substance when left to cool and mix with corn syrup...

Meanwhile, in the Philippines, though we still use the fish gut condiment (called something else, not catsup/ketchup and it's not very common) we're using the banana ketchup for dipping sauces or as accompaniment in dishes that uses tomato ketchup or tomato sauce.

I have Heinz tomato ketchup, UFC tamis anghang, and Jufran in my kitchen. To me, different dishes taste good with different types of ketchup 😂 I really want to add Del Monte tomato ketchup to the rotation, but I've never seen it being sold in any store here in the US.

Non-newtonian is actually a collective term for several ways a liquid can differ from Newtonian behaviour. For ketchup, Bingham flow is applicable, meaning it essentially behaves as a solid until a certain threshold is reached, after which it will start flowing, and it requires time to get back to the solid-like state

My roommate, the biochemistry major used the term thixotropic to describe catsup and showed me how to hold the bottle by the neck and spin it gently to loosen the contents.

Kecap in Indonesia is actually made from Black Soybean as main ingredient. What you guys call Ketchup (same pronounciation with Kecap) we call it Saus Tomat, literally Tomato Sauce. Source: I'm Indonesian

Shakes head..some errors there...first of all, it's keçap which is pronounced like ketchap in Bahasa Indonesia..second, that's not fermented fish sauce, you'll find that in Thailand. The keçap in Indonesia is soy sauce, in the three basic varieties keçap manis (thick sweet), keçap asin (thin salty) and keçap manis sedang (thick medium sweet and salt) This stuff was the origin of the name and the concoction with tomatoes.. Worcestershire sauce however has nothing to do with the origin of ketchup, the only thing it has in common with the story told here is that it started with a fermented fish sauce in India. A retired English general demanded that sauce in England and the Lea & Perrins company tried to accomodate him but failed because they didn't have the recipe for that Indian sauce. The product of their experiment stayed in the cellar for a couple of years, forgotten. When they cleaned out the cellar and the barrels were opened Worcestershire sauce was born. At times it's also called English sauce.

Ketchup hasn't been my go to topping for fries since 1975, when I visited England and Scotland , with my Dad. It was there that I learned to like vinegar on them, and have used it ever since.

I always saw catsup as a British thing. I would see catsup being used by my relatives in Trinidad (which was owned by the British until the late 1960s and still retains a very British influence in their culture).

Man can not live on Ketchup alone. He must have Mustard. And any kind will do. From classic yellow to spicy brown. Great vid.

Can’t stand when people call it or spell it catsup. Just looks and sounds idiotic. Might as well just call it what they really meant...CatSoup. Why not?

I was always taught that was a slang or ignorant way to say it. That ketchup was the proper way

The mushroom version is pretty good too. Kinda tastes like a spiced version of soy sauce. It's great on steak.

Tomatoes came late to the game,therefore, had to play Ketch-up. +It now comes in squeeze bottles.

When I was a kid( I'm 59) I used to say catsup all the time, like the rest of my family. I say ketchup now, but sometimes think catsup. A little off track, but I heard similar about how cocoa/chocolate made-- hot cocoa used to be made with hot pepper?cayenne? and no sugar. Only kings and royalty drank it.

I wonder if there is any difference between ketchup and regular old tomato sauce. I can swear that the Heinz ketchup tasted a bit more complex with more spices, but this may just be my brain wanting there to be better quality sauce considering its added expense. It’s a shame that it’s made in the Netherlands where basically every other sauce is made here in Australia, but I can swear it’s better. I’d love to know if it’s my brain or if they are still different between brands.

I agree Heinz is best.If you have "Save-a Lot" stores around you,their Kurtz is pretty close.I think both are a bit sweeter than other brans.

Christel Headington Nah, I’m in Australia, completely different kettles of fish! It’s why I’m somewhat disappointed that the Heinz sauce is the only one that is not made here. Everything else, even the home brand Coles, Woolworths, even Aldi, which are the big three here, everything else is made either here, or in New Zealand. I still think Heinz is better, I’m just wondering why the hell it comes from The Netherlands of all places.

And most people don't know they load up Ketchup with sugar. The same is done with yellow mustard and now even mayonnaise.

So they are the same thing but go by a different name.?.? As children we were told there was some slight difference between Ketchup and Catsup. Fifty+ years ago we were taught that Ketchup was somehow more of a quality product that was made with better quality ingredients, etc.. Lol, now we find out it's the same stuff branded with a different name. Thanks Simon.
