It's to thicken or a binding agent. You could probably skip it

Another great foodie Friday! Those cookies look delicious! I've never heard of that sugar substitute before. I'm not going to try to attempt to pronounce fearing that I might butcher the name. Also have never heard of beef gelatin flower or those Lily's chocolate chips. Where would you find the chocolate chips?
