It should be noted I did not use the xanthan gum or cream of tartar in my pavlova. It did suffer a bit with a little bit of weeping which is usually caused by not using xanthan gum or cornstarch. I wanted to test the recipe without and see how it would hold up.
The meringue is crispy which you can see (and hear) in the closing video and images.

Thanks so much. I used my keto lemon curd recipe and added lemon and lime zest and juice and just a tablespoon of frozen passionfruit. It gave it a nice tropical summery flavour. Will powdered stevia work for the sweetener? Also, can you whip this with a hand mixer if you don't have the elaborate stand mixer? Do you know the info for the music you used on this video? I really like it.

Hi Susannah, I haven't tried it with powdered stevia but I don't think it would work on its own. Stevia being such a concentrated sweetener you would use a whole lot less and I don't think the eggs would stabilize. I haven't tested so cannot really say whether it would work for sure. You could search Google and not only check the recipe but look at the structure of the pavlova as I have heard there are some out there that do not work.
