Yeah allulose is great I made marshmellows with it and they tasted like the real thing. Idk why she’s saying u can use swerve bc erithrytol recrystallizes every time. It’s chemistry and you can get around it so it gives people unrealistic expectations whereas if she said you can only use allulose at least it’s honest so people don’t waste a shit ton of expensive ass sugar substitutes.

I made this today Followed instructions and it turned out great! Used Hersheys Zero Chips. Topped with chopped sea salted almonds. It does require a lot of stirring to combine butter and Splenda brown sugar, then when it is all one color, bump up the heat just a tick, bring to boil and keep stirring until reaching 300 degrees. Worked great the first time. Thanks

Your flaky pie crust recipe is so good, I can't stop eating it. I've made 3 pies with it in 2 weeks. Pecan pie, a cream cheese pie and this morning I finished a coconut cream pie. I've made SO many keto pie crusts before. I'm not sure what's different about yours but it is THE one pie crust recipe I will ever need! ps I put the butter in the freezer for 30 minutes or so, and then grate with a cheese grater. I use the dough hook on my kitchen aid, even though my ninja food processor has a dough "blade."

I just made this - it is beyond delicious. I used Lily's semisweet chips as the only deviation from the original recipe. There was a tiny bit of butter on the surface of the toffee but after I put the flaked salt and the nuts over the melted chocolate, you didn't even notice (I think I rushed the cooking a bit - maybe next time I'll let it boil for a solid minute after reaching 300.) As many of us know, making candy can be tricky. I ate a couple pieces, my husband ate a couple pieces - the dog wanted it but didn't get it, and I had to put the rest out in the car lol - because I KNOW we were going to eat the whole thing tonight. Thank you so much for all your wonderful ideas! !

Wow! It’s good. It’s impossible to overeat which is crazy since the stuff made with regular sugar is completely addictive. It tastes really really sweet to me. And, I consider myself a sweet tooth. Tried this recipe twice - first with powdered swerve because that’s what I had. The toffee was little more than just granulated powder as it set. Gritty and more dissolved in the mouth instead of cracking and setting. Tried again with brown swerve. Same thing. Definitely not a hit. It was like biting into granulated swerve. Just terrible. Edit to add that I tried this with Allulose and it was PERFECT. I absolutely would not recommend Erythritol. The Allulose browned as it cooked up to 300 and was the perfect colour, taste and texture. Hard cracked too.

Thanks for the recipe. I tried making it today. Some of the butter seemed to separate out as they cooled and the layers didn't stick together in some places....maybe I should have cooked the toffee I bit longer. But the candy is delicious! I'm glad to have a Lego candy recipe for the holidays.

I make hot chocolate with 1 scoop Perfect Keto chocolate collagen, two sleeves of LMNT caramel, and one SkinnyDipped Dark Chcolate Salted Caramel square and 16 ounces of water brought to almost a boil on the stove. Mix thoroughly and it stays hot for hours in my insulated cup. I also add 1 tsp Bulletproof MCT oil but it can be omitted.

I wonder if allulose would make a more "hard crack" toffee. It definitely caramelizes better than erythritol blends.

Erythritol tends to crystallize the hardest, so I have a feeling that if it doesn't do it, allulose would be even more... mediumer. Xylitol tends to stay chewy as well. But I bet a mix of erythritol and allulose would work best, flavor wise.

Allulose won't harden into a toffee. It'll be more a hard chew caramel. I tried several times a few years ago before learning the properties of allulose because I hate the cooling effect of erythritol. The finished product will taste good with allulose, but it will be chewy.

I used swerve brown sugar and I don't know what happened . It melted and instantly turned dark brown ( looked burnt) and would not absorb the butter no matter what. I ended up throwing it away and used Splenda brown sugar blend and it worked perfectly.

I used brown sugar allulose, and it didn't mix well with butter. It ended up like taffee vs toffee. Still yummy, but letting everyone know to use a different brown sugar substitute for the hard candy. Use allulose if you want stretchy taffee like candy. ❤

I followed the recipe exactly except that i used Keystone brown sugar allulose and it came out delicious but soft and chewy not hard or even medium crack. 6g total carbs but the majority of my audience counts net carbs. When calculating the macros, it depends on how many pieces you get and how you break it up. It will differ every time, so you kind of have to calculate them yourself.

Looks good. I can't use the artificial brown sugar, so will half to stick to Monk sugar. I grew up using the water method and it does not work with sweeteners. Now my second problem is I do not own a favorite Christmas spatula. Just half to use my favorite one and hope it does the trick.

Here’s a secret that I learned to help the chocolate melt faster. Put it in the fridge the day before and day of baking you put it in your food processor to make it a dcrumble that way it will melt so easily. Also, I like to spread some sliced toasted almonds at the bottom to start this whole thing off and then sprinkle on a little bit of chocolate crumble that you made so when you pour the toffee on top, it melts that chocolate and then on top of the toffee, you add some more chocolate crumbles and cover it with foil, so it warm and then top that with a little bit more slice toasted almonds

I really like this toffee except when it hardens the butter separated from the toffee. I would think it alters the taste. I also tried a couple suggestions that were made, like boiling it to 310 degrees. I thinks it hardened at a better consistency. I’ve made it 3 times, trying to perfect it before the holidays!

Mine did not work correctly. It has taken a long time to set up, and some butter has separated and is firmed up on top of the toffee. I used a candy thermometer and got it up to 300-310. It is not hot enough to melt chocolate. I’m going to go ahead and put chocolate chips on and melt in the oven. Hopefully it will still come together.

Glycemic index for erythritol is 1, allulose is 0, xylitol is 7, where as table sugar is 65 and maltitol (the sweetener commonly found in sugar free products before keto became mainstream) is 35. I had gestational diabetes twice and checked my sugars like a hawk. Sugar free sweeteners (except maltitol) did not spike my sugar - but "low carb" bread products such as Aldi keto bread and tortillas, did spike it. Your insulin will spike anytime you eat anything. But lower glycemic index means less sugar, and less insulin. If you want to test how sugar free sweeteners affect your glucose readings, try eating them on an empty stomach with no protein or fiber to buffer the absorption.

Kindly advise which chocolate has no carbs, please!

She used Choc Zero. 60 pieces, 70 calories, 6 carbs. I'm not keto, but I like using Lily's brands instead

It was clear that her recipe was NOT zero carb as she claimed, but one can always hope. 🙂 I do appreciate all of the work that goes into recipe development and the generous sharing of them, but accuracy is always important, the devil is in the details. I, too, prefer Lily’s over Choc Zero, and my thanks again for taking the time to provide such a helpful reply.

I made this--love toffee--tastes good, but grainy. Never made it to 300, started to burn, but it did set. How to you keep it from getting grainy or burning?

Keto isn't no-carb. It's low-carb and high-fat.

I wonder if you used white allulose with a teaspoon of molasses (for the brown sugar) if it would cook to hard crack? I do this with a candied nuts recipe I have and it works wonderfully for toasting the nuts and cooking to a hard crack.
