I wish in your future videos you include non-microwave instructions. I appreciate that most people own a microwave oven but there are those of us who don't use one and cook food on a stove or in an oven. I'll have to go and find a recipe for this where it's cooked in a traditional manner so I know how to cook it and how long. I wish you had shown us the traditional way this is made as well or at least given instructions for it. I think this one's pretty simple to figure out but some of them, I just can't cook from microwave instructions. The recipe itself seems similar to an Italian lemon ricotta pie that I've made, which is baked in a crust rather than cooked like a pudding on the stove toplike I suspect this is made traditionally. As delicious as that was, seems like this is next level with the cardamom and saffron. I can't wait to try it!

I made this burfi two weeks back and it was so yummy. I cooked the whole thing on the stove only. And it stayed more than a week in the refrigerator.

I tried on the stove top. I found it easier than the microwave option. I used a very big pan. Turned off the heat to mix, just to be safe

Yes you can! You can toast them and either powder them for sprinkling on top as you set it or chop them and fold them into the mixture right before setting.

What brand of ricotta cheese did you use? I used bell weather farms hand made ricotta. My mixture was never as smooth as the video showed from the beginning and always had little bumps in there. It also cooked _really_ fast even though I used 3 minute increments (not 4 as was suggested). And I only cooked it 4 times ie total 12 mins. Even then, I had a 2 tiny spots that had started to burn which I was thankfully able to remove and enjoy the rest. Also the mixture shrank A LOT and I got just 8 pieces not 24 even through I started with the same measures as the video. Very confounding. The end result was a more rough looking but soft textured traditional kalakand with a little bit of that amazing ombré browning effect. Tasted exactly like Kalakand too! I’m going to go ahead and call it that. I think I have a few more experiments ahead of me to get to the “burfi” finish. Thanks for the recipe. At least I still ended up with a good (better?) dessert even if it wasn’t what I set out to get 😜. Edit: I think the ricotta I used was a little too fancy for this. I’ll try the store brand next time to start with something that isn’t as textured.

Thanks! The easiest way to get the macros for the whole recipe is just multiply all the numbers by 24 and then divide by the number of pieces you want to cut.

I have not tried it with almond milk, but it should work. Eventually, all the moisture evaporates anyway. Maybe you can try a smaller batch.

1. Yes, you can make it on the stove but the mixture tends to splatter so we prefer the microwave method. 2. Though we have not tried it, cottage cheese has a different texture so it may not work in this recipe.

Yes, the stove is always an option but it will require you to continuously stir and babysit it. On a side note and from personal experience, scalding hot ricotta cheese splattering on your hands is no fun :)

Tried in microwave turned out well but I have an old corningwave and wasn’t sure if it was microwave safe so, had to substitute. Unless you have a good lid, it’s a bit of pain!!

Different brands will have different carb amounts but in general, ricotta is fairly low carb. Cream cheese will not work because it gets softer as it heats whereas ricotta dries up. I started keto mainly to support my husband's weight loss goals but soon realized that it reduced the inflammation in my body that had caused me severe joint pain for years. I am now joint pain free :). I'm glad you're finding this channel useful. Good luck to you.

The glass pan used for cooking is too big and heavy for the amount of burfi. The setting pan is much easier to handle.

I started keto 2 months back with 180 and came down to 168 pounds within a months time. But since a month my weight is stalling and I have no idea what wrong m doing. Its frustating.
