While shopping at Sam’s today and putting several bags of almond flour in my basket, another shopper, walked by and asked me how I use the almond flour and I told her about you and all the different flour recipes that you’ve come up with to improve on taste and texture, And she said she would get on KZbin and look for Victoria’s keto kitchen. Then, as I was checking out my groceries, the cashier asked me the same thing, and I gave her the same information so that is two people today that I have referred to Victoria’s keto kitchen. Tonight I made up the Einkorn keto flour recipe and the new standard keto flour recipe to make a couple of my favorite recipes using these flours instead of all purpose white flour. Little by little, I’m trying to convert so that I can still enjoy foods that I’m used to eating. My weight is under control, but I’m diabetic and my goal is to keep my carbs low to manage my blood sugar. Thank you for all your hard work and dedication.

If you beat the heck out of the butter/sugar, it will also help coat all the erythritol and make it less "cooling". Beat it for about 7 minutes.

Would love a video describing the different sweeteners and when/why to use them! Had no idea about the hardening, or about allulose dissolving!

Love them. I added 100 percent peanuts peanut butter to the batter. Then drizzled melted no sugar lilys chocolate chips on top. Excellwtn!

May i ask, did you substitute some of the butter for the peanut butter or just add to her same recipe amounts? How much peanut butter would I add? Hubby would be thrilled as other low carb peanut butter cookies have been ok but not great. He loved these shortbread ones 😊

I added about 1/3 cup of peanut butter to the existing recipe. make sure you use a lower carb peanut butter....i used 100% peanuts brand.

Thank you, thank you, thank you! I am just finishing up my 4th batch of your shortbread cookie recipe. I used the 2.0 flour mix and could not be happier. 1st batch was the straight shortbread recipe. The second batch I added some diced bake believe chocolate Chios and a teaspoon of Dutch processed cocoa. Third was a tablespoon of cinnamon added to mix and cinnamon with erythritol/ monkfruit topping. The last batch I added a 1/2 cup of ground pecans. Very pleased

Hi Victoria, Alicia from Spain, I tried your coffee recipe and OH BOY!!! Does it work, I no longest have that burlington sensation in my throat, the flavour is better and creamy. I keep it in the fridge, here we are around 30C, the next day, like everything, it tastes better. THSNKYOU, you are the best.

As soon as I watched you make these cookies I took out the butter to warm. When I grabbed my container of Einkorn flour the lid popped off when I shook it and it went everywhere. 😲. Luckily there was exactly 1 1/2 cups to make the recipe. They turned out delicious! Thank you and Merry Christmas.

Made the cookies today and what a great success ☺️. I did a little personalizing by trading the vanilla for orange, added some orange zest and topped with home dried cranberries. I needed more orange and should have incorporated the cranberries into the dough instead of pressing them in on top but they are still tasty 😋 Thanks for the wonderful recipe

The rectangular block of dough is chilling in the refrigerator in a box from a poind of butter. I remember a neighbor when i we five years old molding her shortbread cookies like this. I'll let you know how they turn out!

These turned out great! We were staying with our daughter's family and made these for our 10 hour drive home. Our grandkiddos know Grandpa needs "special" cookies because his body can't have sugar. I let them poke their initials - A,M,F,- with a fork in several cookies each. They were thrilled when their initials stayed readable after baking. Of course, they each got one for themselves before making a roadtrip treat pack for Grandpa. Fun memories and delicious results, thank you! ❤

I took my old recipe for ginger snaps and used your flour and alulose and they came out delicious soft and little more like ginger bread but everyone loved them and didn’t know they were keto. I do find with your flour ( I am using the almond flour blend) that a lot of the keto recipes have lots of eggs and with the egg white powder in the flour that it’s to eggy. So I am trying my old recipes with your flour and a sugar substitute and am having great results. Thank you for all your hard work.

Thank you, Victoria! I requested shortbread cookies a few month ago because I was not able to perfect a crisp cookie that tastes good. You did it!!!! I didn't realize erythritol makes all the difference. I used almond extract in my second batch, and they taste just like my almond butter cookies. Victoria! I made the short bread cookies a couple of days ago and they are bomb! So easy to make and utterly delicious! I can’t stop eating them I eat three or four at a time these cookies are so addicting. I am thinking about trying a flavor twist to this recipe with lemon extract, almond extract or maybe even drizzling them with a little bit of sugar, free melted chocolate chips. The possibilities are endless. Thank you so much and I just want to thank you for your keto 2.0 flour. These reminded me of Walker Shortbread Cookies. They were delicious! So buttery and crisp. Add pecans, you get Pecan Sandies. I'm going to try peanut butter. I bet these make a mean peanut butter cookie. I mixed my sugars using some allulose, stevia and erythritol to avoid the cooking affect.

Victoria, you are amazing. The shortbread is delicious. I pressed half of roll in glass dish to use for a crust. Thinking about pecans and chocolate on top to bake. Thank you so much. Room temperature ? - in summer in my house that could be 100 F. In winter that temperature could be, 60-ish or less ... 😂

Add 2 Tbs of baking powder to the entire batch of einkorn keto flour and it will become self rising 👍🏼

Victoria, so if I used allulose, the cookie would be soft. If I added like 1/8 tsp xanthan gum, would it be chewy? I ask this because with erythritol, I get a bad reaction. Thank you. Happy Holidays ❤

I am never sure if you use u salted or salted butter in your recipes. I use unsalted if I see you adding salt separately, but it would be nice not to guess. Would you considering adding salted or unsalted to your ingredient description? Much thanks for all you do for our community!

I've read that when you take half Erythritol and half of another sweetener that will eliminate the cooling effect! 😊

I've been baking keto for about 5 years. I've tried many combinations, and i still still get the cooling effect. The best way, for me, is to bake at least a day ahead.. that minimizes it a lot.​@loriwasham

What weight is 10 tablespoons butter. In the Uk it's really hard to work with cups and measurements other than grams

Would this recipe turn out as crispy with your 2.0 flour blend? Or does it really need the einkorn flour blend?

That is what I was going to do but then I remembered that sometimes her flours are not equivalent to each other. So I got lazy and just used my tried and true Scottish Shortbread Recipe with the 2.0 flour 1:1 for the regular flour. Did not get crispy/hard at all. All Day I Dream About Food has a very good shortbread recipe but still....not the crispy crumb of regular shortbread. I think I will try her recipe with Victoria's 2.0 flour next. I LOVE shortbread. More xanthan gum?

Just found the facebook group and over there people have had great success using this recipe with Almond flour 2.0. So I want to try that next. but now I am out of butter.
