If you wrap one sheet of plastic wrap tightly around the bottom plate of your tortilla press, and another sheet of plastic tightly around the top plate, you won't need the parchment rounds, and will save a lot of time and hassel. Alternatively, if you find it useful to move the dough off the tortilla press on a piece of parchment, maybe just wrap the top plate in plastic. Either way, you also save on parchment paper, because that one piece of plastic wrap on the top plate will work for every croissant you're making.

@@louferguson7048 Croissants are made with laminated dough, essentially the same process you use to make puff pastry, which involved folding dough (in thirds -- like you would fold a business letter) around a sheet of butter and rolling it out, chilling the dough-and-butter package, repeat, repeat, repeat. You wind up with something like 700 layers, no lie. As the butter is worked in, it forms tiny little flakes, and when you put the dough in the oven, the water in the butter -- all butter has water in it -- turns to steam and PUFFS up the layers. Because the layers are so thin (because there are 7-freaking-HUNDRED of them) they get very crisp in the heat of the oven, so you have one layer after another of crispness. When you bite into a good croissant, you should HEAR it shatter, and your plate (or your lap) should be showered with little shards of pastry. The pastries in this video look really tasty, but they are not croissants.

If these work for me, I might have to try them in a reduced carb variation of my "Fruit Up-Rolls". Basically, I just take some canned refrigerator crescent rolls and roll fruit roll-ups into them. The roll-ups will certainly never be low carb, but using this recipe instead of the canned rolls would certainly cut the carbs down. Note: If anybody tries this, you're best with actual "Fruit Roll-ups" or "Fruit by the Foot" by General Mills. Other brands like Jovy do have more flavor options and are probably healthier (well, less unhealthy) and turn out okay, but might be a bit grainy. This is because Jovy and other brands as well as those marketed as "fruit leather" have actual fruit puree in them. The puree leads to the graininess. Fruit roll-ups are basically just juice and corn syrup, so they melt well into the crescent rolls. (Again, this is not a low carb recipe, but it is delicious, and I look forward to trying it in a reduced carb form with these rolls. Also, it's a good recipe if you want something small children can help with. They can cut the fruit rolls to size for the crescents with a plastic knife and then roll them up themselves. All the adult has to do is put the pan into and out of the oven.)
