Wanted to add, I actually tried the recipe with no sweetener (for pizza crust) and it still worked but wasn't as moist or browned on top. Oh god! I've been out of keto lifestyle this December and eating a lot of bread, thinking about how hard is going to be January since I'm too accustomed to eat bread. I think this recipe has saved my January and upcoming year, since I don't want to use gluten on my diet, but at the same time, gluten makes that perfect texture and I seen how gluten is the most difficult thing to replicate in keto. The way I was taught to make the roll shape was to sort of squeeze it through a circle formed with my index finger and thumb, pinching off and putting pinched side down. But that would not allow you to premeasure.

I have a family recipe for Dill bread that used cottage cheese. While I am not interested in the latest cottage cheese keto fad, I would love to convert my grandmother's recipe. The ratios were a cup of cottage cheese to 1 egg and 2.5 cups flour, 1 T butter and `1/4 warm water for the yeast (along with minced onion and dill for seasoning) Also 1/4 soda and 1t salt. Where would you start....would you use your recipe and half the eggs and for the rest of the eggs sub paneer cheese (drier than the small curd she used)?

I would use dried ricotta for the cottage cheese, I've had good luck with that. And since only 1/4 cup water I would keep 3 eggs and the butter. Basically using the ricotta instead of the cream. Look forward to hearing if it works, if you try it!

I do use oat fiber in recipes like my biscuits. You can probably swap the bamboo for oat you just might need some extra oat.

Definitely have to weigh eggs. Costco here was selling large eggs that were smaller than small eggs (in their Wilcox brand 5 doz). We actually talked to management about it. 5 Doz eggs now costs 20.99 at costco, $28 at Fred Meyer and Wallmart, $22 at Safeway. At those prices, I should be getting large eggs and not extra small in my large egg carton.

Yeah its crazy! Eggs always increase in price around the holidays. Luckily I haven't noticed them being small. I buy Walmart or BJs 5dz. Boxes. They went from $14 in October to over $20 in November.

@@KetoUpgrade Here in California we are dealing with shortages due the bird flu. Some stores are limiting purchases to 1 dozen per customer. That has hiked egg prices nationwide due to the slaughter of 10’s of millions of chickens plus the holidays. It takes about 4 months to rebuild a flock, so by Easter we should be in much better shape. 🐣

I’m going to try these. I did a protein sparing Hawaiian roll but it deflated and there was pineapple extract. It was good but flat and didn’t taste like the Hawaiian sweet rolls. I’m definitely trying this!

Awesome!! We used to buy the Hawaiian sweet rolls? Cut the whole batch on half and load them with a huge square cooked burger patty, toppings and cheese and bake long enough to melt for quick sliders for our 5 littles. That might be nah on the menu! 🎉🎉🎉 Thank you!! Amazing as always. I also can't stop experimenting with bamboo fiber recipes. Lol

Question I’m a rookie baker I have some keto products like big bag of Oat fiber and almond flour that will expire shortly can I continue to use the bag up or do I have to toss it all out? With products being so expensive it would be Awesome to still be able to use also what does the inulin do and does it matter which product to use??❤❤❤

You can use oat fiber in place of the bamboo but may need more. The almond you can use to replace some of the bamboo. But if you take out 30g you need to replace with 90g almond. Inulin is the only low carb ingredient that will make the yeast activate but you can use sugar, honey, maple syrup or molasses in small amounts to do it.

Thank you so much creating these rolls. They look good! Can egg white powder be substituted one to one ratio for Unflavored Whey Protein? Another option if I want to substitute almond flour for Unflavored Whey Protein, would the ratio be 3 part almond flour and 1 part of Unflavored Whey Protein. And for Grass fed Beef Gelatin, any substitution would you suggest for this as the binder? I have worked with psyllium husk but somehow baked goods always turn out slimy in the middle Thank you!

Thanks. I find egg white powder dries out my recipes more than whey. And I've tried swapping beef protein for the whey and it gives no structure and is very wet, at least in my cake recipes. They work totally different so I would have to do completely different recipes.

Do you temp your baked bread products? Don't remember where I heard it but 210 F comes to my mind. I started checking Victoria's bread with bamboo fiber & 210 is working with that.

Mine ended up doughy/wet inside. I used the exact same sugar that you used. They looked so good baking up. Then they sank and were doughy inside. What should I try next time? Cook longer? They really got brown, so I wasn't sure .

If your dough looked the same as mine the only thing I can think is your oven runs hotter than mine. Maybe 350 for 30-35 minutes. You can probably still eat those ones just have to cut and toast them. I have all my tests I've been eating that were still doughy.

There is no pineapple juice in kings Hawaiian rolls but if you want to add a teaspoon, if should be fine. Might need a tiny bit more "flour" to get the stiff dough like I had.

I know you don’t use vital wheat gluten, but I’m wondering if we can substitute a half a cup of that for the sugar. I’m definitely not an expert in this field and know how to stay in my lane but what are your thoughts? Mine started browning quite a bit after 15 minutes so I turned the oven down to 350° and rotated them then baked for 10 minutes more. Perfect! Do they need refrigerated? Thank you again!❤

You're welcome! So glad you loved them! Good job using your judgement on the bake!!! I omitted the sweetener and didn't need to add any extra "flour". My experiment didn't get very brown though, so you may want to egg wash them to get them to brown a little. It was maybe a little less chewy though. I've never worked with vital wheat gluten so I'm really not sure. You may be able to swap out some of the gelatin for vital wheat gluten. I had them out for a few days but wouldn't keep them out much longer since they are moist, they may mold quite quick. I had them in my fridge for a few weeks. ❤😊

@ ah ha! I used brown swerve and it has allulose in it so that’s why they started browning quickly. Next time I’ll use the Lakanto like you did from Big Lots, I went too 😂 Now all of them are closing 😭

I have a serious problem with bamboo fiber - every baked good is green when baked. How did you get it to be just a nice brown, no green?

I've never had that problem so I'm not sure. I always use Zimmerman brand. Google said a chemical reaction usually between Sunflower seeds and baking soda. Not sure what recipes you are using that that is happening to. My recipes shouldn't do that.
