I do the same with my son who is autistic. I'll put a new food neat his plate and will encourage him to handle touching it then further along licking it. Then taking a bite and having a spit cup. Eventually the idea is getting him to chew more each time he tries the new food before spitting it into spit cup and then hopefully one day getting him to swallow it.
