Hi Kevin. Thanks for such a lovely video. I'd love to have a go at making this, and have a quantities question! *How many servings does your tonic syrup recipe make, please?* I'm assuming there's some left over from the 45ml used? Hoping to have a go at this, but just trying to work out if it's cost effective where I live with all the ingredients I'll have to buy!

Just made a batch of this and the gin and tonic it made was very tasty. Not too sweet, has that nice unmistakable quality of tonic water. It took a little while to pulverize the cinchona bark but from start to guests drinking drinks it took me a little over 90 minutes. 10/10 recommend

I'm a big fan of trying to make general products at least once. This is definitely on my to make list! I doubt nitrous canisters will work the same, but I have those for whipping cream and I'll likely have to try before buying CO2 cartridges to see how different/interesting it is as well.

It's been 21 years since I enjoyed a Gin and Tonic. Now I mostly drink San Pellegrino and sometimes Tonic Water, especially during the summer. The Quinine helps keep the mosquitos away. Western Family brand is a good price. You can get it at Save-On for just a $1.19. Great for all the bugs that can be transferred by mosquitoes. Right Rick Mercer?

Finally made this and love it as expected. My local hispanic market carries cinchona bark, so a thank you to my local Salvadorian community. I kind of messed up and over reduced the steeping liquid by forgetting a lid, but reduced the acids to compensate. Still wonderful but will try to perfect it next time, and thinking maybe this tonic syrup makes a great Christmas gift for my father who has been drinking gin and tonics all his life. Is there a reason that you ground the Chinchoa Bark rather than tossing it into some vodka to create a tincture? Quinine appears to be very soluble in alcohol and not very soluble in water. You could assume a 100% extraction of the quinine into the vodka and then know or dose the quinine amount with much more precision (as it is dangerous in large quantities). I would think the benefit would be cost savings on chinchoa bark since you need less plus safety of minimizing chance of over extraction of quinine.

0:55 A question, I have been always taught not to pour the spirit, recently even the mixer, over ice cubes as it causes extra unwanted dilution. What is your opinion on it, as you are pouring the spirit and the mixer over? Does it matter?

Great question! I avoid doing that for shaken drinks - always add ice last (or drain the water if you're chilling the other tin), but when you're building the drink in the glass there's not a lot of options especially if you work with the ice spear. But always chill your glass first. Cheers!

Hi! Thank you for trying out my recipe. I get the same result so there is no need to worry. When you will mix it with water you will get a clearer tonic, but still with a yellowish color. I used a clear ice cube so it looks like it's almost colorless. By adding the gin and ice cubes, you will get even better results. But be sure to really strain the syrup so there are no particles left.

Wow this is amazing! I recently bought a sodastream and love tonics. So I did some research and bought bark of the cinchona tree online. Your video couldn't have come at a better time. I was wondering (besides the zests and the sugar) what flavors do the other ingredients add and would it still be nice if I skip them? And what other ingredients would be good additions to experiment with? Keep up the good work, this is top quality!

The acids adds acidity so tonic taste more balanced sweet/bitter/sour. Every tonic has it. And salt lift up all the flavours. I wouldn't skip that. You can also use honey mixed with sugar for honey tonic, you can also add flavour agents as persian rose petals or lavander for floral notes, rosemarry, bay leaf for medditeranian taste or just lower down some quinine and add wormwood or gentian for different bitter taste. Love your videos! At 4:35, is it necessary to let out the excess CO2 gas? Have you done actually done a test to see if there is a difference if you don't?

Thank you! It's necessary in my case since I have a 500ml Isi siphon and the producer doesn't recommend a pressure of two cartridges. I haven't done any test for that but I assume that it's better to release the pressure between two cartridges also in a bigger siphon because tonic starts to foam when forcing Co2 and it might foam too much.

@@KevinKos Kevin, I have an ISI 500ml also. Not sure where you read that the producer doesn't recommend two cartridges. All of the pros, like Dave Arnold, are charging with two without venting (Nitrous and CO2). I don't think there is a safety concern there. Not trying to be a troll. Just looking for answers based in fact/science which are hard to come by for the ISI because it's all happening in a closed, opaque system. Your comment about it foaming too much, I wonder about that too, since we can't see it? Thanks for responding and looking forward to more of your videos!

Dave Arnold put the Isi pressure chart in his Liquid Intelligence book where he made some tests with different liquids, and liquid volumes, and the chart said that Isi doesn't recommend a second charge in a half-liter siphon. Also, I read some instructions that came with siphon and ended up with the same recommendations. I would say that Isi is strong enough for more than two cartridges but I rather stick with the instructions. I ended up with super carbonized tonic water with this procedure though. And with carbonizing the drink, Dave Arnold also vents between two chargings. About the foam. I noticed some exiting foam when I pour a bit too much liquid so I would say that charging with two cartridges would yield a similar result. I made the experiment with a soda streamer that has a transparent bottle and the result was just what I was expecting. Too much pleasure caused foam to exit through vials. Thank you, I am glad you really like to dig deep into this technique.

I only use 15 ml of syrup for the total 100 mL of tonic. Then I also added gin, so that's why G&T becomes so clear.

Can u take the quinine out using the infussiom by pressure? 🤔🤔 i mean, when u gasified the water, if u add the barks inside the cream syphon, then add the gas canister... twice, the syphon can ressist it with no problem, the process is that the pressure existing inside the syphon will force the liquid particles to get inside the solid, so the water is now inside the bark (u can do this with lemon zest and other stuff) now, when u depressurise the syphon, exactly as u did, the particles of water will get out of the bark taking the bark flavour and molecules that can lixivate, im this case, quinine. That u can infuse the water with quinine thia way, is just theorical, u do can mix water with flavours or even macerate liquors like vodka, tequila, etc, so if anyone have the bark to try please, tell the experience.

Good thinking, but I wouldn't recomment you to do this. Cinchona bark has quinine which can be harmfull in bigger quantities. So when you are making the Tonic Water you have to be sure, that you filtered every part of cinchona bark possible. In your case you wouldn't do that and you will still end up with some small particles in your drink. I left a link aboutin the quinine in the description. Check it out.

I love the precision that you do your recipes with, that's one of the reason I always follow them! But I found both this one and ginger syrup too sweet and not powerful enough. This one I reduced the sugar by 1/4 and upped the chinchona by 1/6 and it came out perfect. Will also try to had a couple of berries of juniper, and maybe allspice, see how that goes. How do you think this will keep outside the fridge? 🤔 If it keeps for, say, 6 to 8 hours, I might connect a jar of it to my soda gun...🤩 I'll have to throw away whatever it's left at the end of the day, but it's cheap enough that it might be worth it for the speed and ease of use.

That's the beauty of experimenting and finding your preferable taste. I am glad you like it in the end! Just be careful with chinchona. It can be dangerous if used in high doses. I calculated my recipe to be on the safe side. 6-8 hours shouldn't be a problem. p.s. stay tuned for another tonic recipe 😉

I wouldn't increase the amount of chinchona, since I calculate, that we are still on the safe side. You can add some other bitter agents in the process of making tonic syrup. Quassia chips or gentian root would do a great job. Thank you!

Should be good for a couple of weeks. Always make sure your bottles are sterlized to keep the syrup good for as long as possible, then keep it in the fridge, possibly not on the door. But no mather how long it should be fine, always check if there's any mold floating on top. Discard the syrup if it is, otherwise it should be fine. But this one's so good I never have trouble using it in time. Cheers, Willie!
