Worth noting for the Brian Tasch recipe that these fruits naturally contain some sugar, and since Brian doesn't add the fresh juice back in, he needs to add sugar to make up for it. Lemon juice is estimated to contain about 3-4g of sugar per 100ml, Brian ads about double that, but either way it's not a lot of sugar per shaken cocktail, certainly not in something like a daiquiri where you're adding another 15-20ml of rich syrup. I would like to try to test this sugar content with a Last Word, but chartreuse is getting harder and more expensive to get my hands on.

I will still use a sugar cube for an old fashioned if its the only drink il make for 10 mins. A squirt of soda on the cube melts it down quicker and gives a few ml of dilution to save 60 seconds of stirring. dehydrated orange with some orange bitters can save time when you need a fast orange garnish and you dropped your last last orange on the floor 😂

When it comes to garnishes that don't 'enhance' the flavour, it might be a matter of perspective, but I'm tired of citrus twists and edible flowers (which most people don't eat anyway). I'm looking for different ideas, like one cocktail I developed that places a roasted marshmallow on a skewer across the top of the glass. Not every drink needs a garnish, but we want to put one for presentation's sake. I joked (threatened?) at my last job that I would start attaching photo-booth style pictures of myself to some of my drinks.

Dear Kevin, I love your work and your super juice methods revolutionized my home mixology AND cooking. But can you please devise a formula for tangerines too? Just like kumquats they are typically not juiced but due to their unique taste, can be a great addition to drinks and foods

Why not use an actual lime or lemon. It’s really not that hard to juice a lime or lemon…. I get why this stuff (which never tastes like a freshly juiced citrus) is useful for bars with high volume traffic, but for the home bartender?

There is a distinct flavor in Coca Cola that is hard to identify and downright impossible to find in other colas. You just can’t put your finger on it. Then one day, while adding a surface treatment to the (then) highest paved mountain pass in the world you begin to get altitude sickness. The workers ask if your company gives you drug tests. You say “yes”. At that point they give the option of going to a rural hospital in the Andes or drinking mate de coca. You take the first grassy sip. Upon a second taste you know it. It’s “the missing Coke flavor.”
