Love tarragon with chicken. In the UK these treats are known as volovents and are mostly served in miniature versions as canapes. Because they are very small, the bechamel is quite highly flavoured and the ingredients limited, usually mushroom plus maybe ham added to the chicken, all finely chopped. Or they may be fishy as you suggest, i.e., crab, salmon, etc. They would be a nice addition to one of your delightful cocktail parties, which sound great. I'm not much of a fan of cocktails and tend to stick to gin and tonic. You might be amused to know that I once stayed at a motel in Boothbay Harbour, Maine and when I asked for a G&T at cocktail hour, the proprietor said, "You must be a limey" to which I confessed. He responded, "Do you know how to make a steak and kidney pudding?". I admitted that I certainly did, to which he replied that he had stayed in Bermuda where he chose to have steak and kidney pudding every day! The mind boggles at the thought of consuming heroic quantities of S & K pudding in the climate of the Carribbean but interesting to note this persisting relic of colonialism! I do so enjoy your videos, giving really clear instructions at an unhurried pace, with lots of background information; please don't respond to any pressure to tidy them up!

Thank you Kevin for jogging my memory. This was another delicious treat from my childhood. I can just tasty how warm and flakey the puffs were melting in my mouth. In fact, I’m going to put this on my dinner rotation. Who doesn’t need a comforting childhood memory in this crazy world of ours?!?💜🌸🌞🌼 BTW…love the purple napkins 💜💜💜💜

The shells are both delicious and versatile. You can fill them with creamed veggies, as I did, or use them to hold sweet treats like strawberries and softly-whipped cream. Enjoy!

Thanks for this video Kevin... very chicken pot pie vibes. I think I will make this over toasted baguette since I have some of that but not the puff pastry. As an aside, I need to get some of those shells- they look simple and elegant... a pandemic buy that is still in my freezer unused is filo dough... I have no idea about using that one still. This rrecipe worked out brilliantly I think they might also be known as vol au vents but sometimes puff pastries is enough they looked delicious and I didn't mind the dribbling down the sides at all no one cares about fastidiousness when fam8shed

Shredded jackfruit or shredded hearts of palm would work for a vegan version. You would also need vegan puff pastry.
