PUMPKIN PIE SPICE PANCAKES
Ingredients for about 10 pancakes
1 large egg
1 cup (130g) all-purpose or "plain" flour
3/4 cup (180 mls) whole milk
2 tablespoons melted butter
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
Grease and preheat a griddle, frying pan, or electric skillet. Beat the egg in a medium bowl, and then whisk in the remaining ingredients. (If the batter is too thick for your liking, thin it out with additional milk.) Pour the batter by the quarter cupful onto the hot skillet. When bubbles form on surface of the pancakes, flip them to brown the other side. Cool to room temperature and then pack into ziplock bags and freeze. To reheat, put 2 or 3 frozen pancakes on a microwave-safe plate, and heat for about 60 seconds in the microwave oven.
FREEZER-FRIENDLY BREAKFAST SANDWICHES
8 large eggs
1/4 cup (60ml) whole milk
1 tablespoon sour cream or Greek yogurt
1/2 teaspoon kosher salt
Grinds of black pepper
1/2 cup (112g) shredded mozzarella
6 English Muffins
Melted butter for brushing the English Muffins
6 slices MontereyJack cheese
Optional: thin slices of meat (ham, turkey, etc.)
Preheat oven to 350F/180C. Beat the eggs in a large bowl. Then whisk in the milk, sour cream, salt, pepper, and mozzarella cheese. Pour the mixture into a greased 9x13 baking dish. Bake until the mixture puffs and the top feels fairly dry to the touch (not wet) -- 18-25 minutes. Cool on a wire rack.
While the eggs are cooling, split the English muffins and brush their cut sides with the melted butter. Broil until lightly golden and crisp -- about 2 minutes (watch carefully so the muffins don't burn!).
Cut the eggs into 6 3-inch-diameter circles, or into 6 squares. On the bottom half of each muffin, add the egg, cheese, and 3 (or more or less) slices of meat. Top with the remaining muffin half. Wrap each sandwich in wax paper, aluminum foil, or cling film, and then freeze. To reheat, put a sandwich on a microwave-safe plate, and heat until the cheese melts -- about 60 seconds.

Breakfast - literally to 'break' your overnight 'fast' - is widely believed to be the most important meal of the day. We are frequently at a low ebb first thing in the morning, due to poor sleep, low blood sugar, and of course for some, the after-effects of night-before alcohol! Stoking the internal fires, getting energy on board, and filling our empty stomach, should be our first morning priority - after boiling the kettle for that all-important caffeine hit! I love to do this sort of cooking during a rainy/snowy sunday. It's a wonderful feeling of accomplishment and really helps to make life easier. Especially nice for unexpected overnight guests. People can choose what they like without looking is if they're imposing on the hostess. Set a pretty table, your guests choose their pleasure, a mimosa or two and everybody's delighted.

New to your channel this week. Your house is lovely and is a real home, not merely a show place. The cooking , gardening, and house care are very enjoyable and relaxing. Setting things up for a meal with the fire burning reminds me of my late aunt and uncle in England, the antiques were used daily, especially their early Chippendale table and chairs. Breakfast through to the evening, reading papers, playing board games, all hapoened there. I even got to polish the furniture and clean the diamond paned bow windows. It was a home, not a fancy don't touch place.

Now you've done it! Now, I'll have to make up a batch of English muffins and make these! I already make breakfast burritos, pancakes, and baked oatmeal, but my son will especially love these breakfast sandwiches! BTW - I've made friends with my bread machine, and tried your Sandwich Bun recipe letting the bread machine dough cycle do all the donkey work. The dough cycle takes about 90 minutes, and I can go do other things while it does it's thing! When it stops, I just pull the dough out, shape the buns and bake. Saves this old lady's back, and takes less time to rise, especially on a cold day. So far, I've made bread, sandwich buns, bagels, and cinnamon rolls, and all of them came out perfect! If you have a bread machine, you might want to give it a try!

Hi Kevin! Nice to see your smiling face! My faves were the egg n vege muffins and the breakfast sandwiches. Never seen the eggs done that way for muffins-looks mouthwatering. I’m a physically disabled person who has to load a LOT of protein to protect her skin against breakdown, amongst other reasons. Could you think about doing an episode (or part of one) where you talk about the differences in flours-taste, protein count, how it bakes up, etc? That would be super valuable to me n I bet others. Yummy ! That would make for about 19 mornings worth of breakfasts for my husband and I to enjoy . 😍 We bake up a frittata that gives us 6 days of breakfasts sandwiched between toasted English muffins. Then we do a blueberry French toast bake that gives us 3 days each, and a big batch of oatmeal that dies another 6 . Nice to have on work day mornings. Love the Avery sightings . Husband just used the leaf vacuum/mulcher we saw you had in previous videos . Love your English muffin recipe. I need to make those again. They are so much better than store bought. Husband just came inside from using the leaf vacuum/mulcher … he rates it a 4.5 out of 5 stars the only complaint was the extension cord kept getting hung up on things but that’s no fault of the product. If he ever needs another one he will buy a battery pack version.

Kevin you should try peanut butter waffles. All you need is 4 tablespoons of peanut butter and 4 eggs. Blend well til you get a smooth batter. Spray your waffle iron with non stick food spray and pour in batter and cook. Two ingredients is all you need.
