Simple question about the interface: ¿How can we get the "Geometry View" window working separately from the rendering scene view? Because if I modify the view on the geometry window it also changes on the rendering window

On the Geometry View toolbar, click the Camera tool - When 'Active Camera' is selected the same camera view will be seen in both. When 'Perspective' is selected it will allow you to position the Geometry View camera independently.

He mentioned polygon modeling and triangulated mesh so it should be Autodesk 3DSMax or Maya used to make the 3D model.

If you simply need a quick image, sometimes simply taking a screenshot is easier. For high resolution images or more control, then creating a full rendering is the way to go.

Why you waste so much time to split geometries at the beginning of the video instead of using a curvature texture that does the same thing much easier and faster?
