KFC Copy-cat | Shake in Jar
This time what I share is the premium version of the #KFC Copy-cat recipe, for it uses liquid milk for marination, and quite a lot of seasoning.

What I emphasize here is the method, Guys, that is the Shake-in-Jar method. Well, I think it’s perfectly suitable for beginners. It’s simply practical.
For the main recipe, yes you don’t have to use this recipe, feel free to use your own favorite recipe.
My honest review, this method is suitable for beginners, who don’t want to bother kneading the chicken meats manually by hand. The results are pretty good too. We just have to be fast, chasing targets so that the chicken can immediately enter the frying pan at the same time. Well, I think it’s best to use a big jar.
For maximum taste results, it is better to leave the marinade process overnight, because once I only soaked it for 3 hours, the results were not as delicious as those that were marinated overnight.

Ingredients
Ingredient A
* 1 kg, Chicken Thigh or Breast (Suit your taste),
^^ For the thigh, it’s at about 7 pieces and 10 pieces for the Chest part, but sure you can cut it into 15 or 20, or 30 too, according to taste;
* 1 tsp Baking Soda, optional;
* 400 ml to 800 ml of ice water (for the dipping mixture, the thinner the mixture, the lighter the texture of the result).
Ingredient B (Marination)
* 2 tsp Garlic Powder, replaceable with 8 cloves of garlic, puree;
* 2 tsp Broth Powder;
* 1 tsp Salt;
* 1 tsp Coriander Powder;
* 1 tsp Pepper Powder;
* 1 tsp Ngo Hiong powder (replaceable with ½ tsp Nutmeg Powder and ½ tsp cumin powder);
* 200 ml or about cup UHT milk,
^^ Replaceable with Soda Water, or plain cold water;
* 1 Egg, beaten lightly,
^^ for thin and light KFC curls, you can skip using this egg;
* 2 tsp Oregano Powder (Optional);
* 2 tsp Sage Powder or Basil Powder, to taste, optional.
Ingredient C (For Coating)
* 800 gr Bread flour;
* 200 gr Cornstarch;
* 2 sachets (Royco) ready-made Chicken Broth Powder;
* 1 tsp Fine Salt, to taste, optional.
Note
For an even richer taste, you can add 1 sachet of all-purpose Kentucky flour, with any brand you like.
For the dipping process, if you want lighter Curly results, you can simply use plain water (not the marinade leftover as used in the video).
The thinner the dipping mixture, the lighter the curly texture will be. The Curl in the video is a bit thick (for it uses eggs and milk, as well as a rather thick dipping mixture), if I don’t use eggs, it will definitely get tough. But fortunately, when I use the eggs in the video, I incidentally use Cake flour … Then Thank God - it can still be soft and crispy.
For long-lasting crunchy results, please use Bread flour. In order for the results to be crispy, it is best to fry them immediately once shaken in the jar. Do not let the chicken pieces that have been floured left to wait. Because the results will be prone to overly hardened in texture.
