The thing about Crispy vs Chewy bacon is this: If it is going on a sandwich then it needs to be crispy enough to bite through without issue. Nobody likes whole strips of bacon sliding out of their sandwich or burger every time they take a bite. I like chewy bacon. I don't like chewy bacon that slides out of my sandwich.
