[Kfood] Making Bibim Guksu (Korean Cold Mixed Noodle) for Hot Summer

Hi guys, today I would like to share with you the way that makes Bibim Guksu (Korean Cold Mixed Noodle) for hot summer. So easy to do it at home. Let’s check my recipe now.
Preparation Ingredients: (for 3 people)
- ¼ purple cabbage
- 2 cucumbers
- ½ a lettuce
- 50g bean sprouts
- 1 Korean pear
- Buckwheat noodle (Soba noodle)
- 2 or 3 eggs
Sauce Ingredients:
- 1 small sliced onion
- 2 or 3 tbsp Gochujang (Korean chili sauce)
- 4 or 6 tbsp honey (or corn syrup)
- 2 tbsp soy sauce
- 2 tbsp apple cider vinegar
- 1 tbsp sesame oil
Making:
- Step 1: Cut ¼ purple cabbage into small pieces. Then you also cut the remaining vegetables like purple cabbage, including : cucumber, lettuce, and Korean pear. Finally, chop the onion. Then, put all ingredients in the cool refrigerator compartment.
- Step 2: Boil the sliced purple cabbage for about 1 or 2 minutes and the drain. Similarly, boil quickly bean sprouts for about 1 minute and drain.
- Step 3: Take the right amount of soba noodles and boil them with boiling water for about 3 - 4 minutes until the noodles are soft. In the process of boiling noodles, you should add a little cold water to the noodles. Then, rinse the noodles with cold water to make them tough.
- Step 4: Add all the sauce ingredients into a medium bowl, including: Gochujang, honey, soy sauce, apple cider vinegar, sesame oil, and sliced onion. Mixed well into a blended mixture. Finally, cut the eggs in half.
- Step 5: Take a bowl and then put a small number of noodles. Arrange the cut vegetables, half an egg, and sauce on top of the noodles.
Mix noodles with topping to blend and enjoy. You can add a little cold mayonnaise will make Bibim Guksu more delicious.
