A simple recipe for making Khaja:
Ingredients
- 2 cups all-purpose flour (maida)
- 1/4 cup ghee (clarified butter)
- Water (as needed)
- Oil (for frying)
- 1 cup sugar
- 1/2 cup water
- A few saffron strands (optional)
- Cardamom powder (optional, for flavor)
Instructions:
1. Prepare the Dough:
- In a mixing bowl, combine the all-purpose flour and ghee.
- Mix well until the mixture resembles breadcrumbs.
- Add water little by little and knead to form a firm dough.
- Cover the dough and let it rest for about 30 minutes.
2. Make Sugar Syrup:
- In a saucepan, combine sugar and water.
- Heat the mixture over medium flame until the sugar dissolves completely.
- Add saffron strands and cardamom powder if using.
- Boil until the syrup reaches a single-thread consistency.
- Keep the syrup warm.
3. Roll and Layer the Dough:
- Divide the dough into small equal-sized balls.
- Roll out each ball into a thin rectangular sheet.
- Brush a little ghee over the sheet.
- Fold the sheet from one end to the other to form layers.
- Roll this layered dough into a cylindrical shape.
- Cut the cylinder into small pieces.
- Roll out each piece lightly to form small discs.
4. Fry the Khajas:
- Heat oil in a deep frying pan over medium heat.
- Fry the rolled discs in batches until they are golden brown and crispy.
- Drain the fried khajas on paper towels to remove excess oil.
5. Coat with Sugar Syrup:
- Dip the fried khajas in the warm sugar syrup.
- Ensure they are well-coated.
- Remove them from the syrup and place them on a plate to cool.
6. Serve:
- Once the sugar syrup has dried and the khajas are set, they are ready to be served.
