In the embryo sac there is a cell know as the central cells (2n).After the first male(n) gamete fuses with the egg cell, the second male gamete (n) fuses with the central cell (2n) to give us 3n condition called the triploid condition which is known as the endosperm. This endosperm is edible, for example the coconut water that we drink is also an endosperm.

@@summer2587 btw the triploid endosperm is used for nourishment to growing embryos. that's why older coconuts don't have much water.
