KIMCHI the Korean Super-food.
Traditional Korean side dish made from fermented vegetables. Over 180 varieties of Kimchi
Baechu (Napa Cabbage) Kimchi
Baek (White) Kimchi
Kkakdugi (Cubed Radish Kimchi)
Chonggak (Ponytail Radish) Kimchi
Oi Sobagi (Cucumber Kimchi)
Nabak (Red Water) Kimchi
Dongchimi (Radish Water Kimchi)
Gat (Mustard Leaf) Kimchi
Pa-kimchi (green onion)
Other ingredients
daikon radish, Korean pear, gochugaru (Korean red pepper flakes), scallions, garlic, ginger, onion, fermented shrimp, rice flour
Lacto-fermentation breaks down the sugars into lactic acid which gives it the sour taste. Usually takes 2-7 days for fermentation at room temperature before refrigeration. LAB-lactic acid bacteria
Why doesn’t other pathogenic bacteria grow-likely the salt, red pepper and low PH due to lactic acid.
Strong odor is from sulfur compounds from garlic and ginger but good for liver detox
Spicy soups are often made with Kimchi.

I recently started eating kimchi, and I love it 🥬😍 I snack on it regularly when I'm experiencing a craving for something unhealthy. The flavor is satisfying and it fills my belly so I don't over indulge. My stomach feels healthier, I'm not bloated anymore, and my skin has started clearing up. It's truly a great addition to my diet 😆👍

I only discovered Kimchi recently. Now I always have a jar in my fridge. It helped me loose a lot of weight. I love mixing my kimchi with pickled beets.

You may want to avoid beetroots, because of oxalates. Beet leaves may have less oxlates.

Chiropractors are not Medical Doctors. At best they could be considered massage therapists, chasing "subluxations". The whole thing was invented by a furniture salesman in the midwest over 100 years ago. It is an outrage they style themselves as "Doctor".

just made some kimchi. I've been eating it for 2 days so far. Two questions: My kimchi tastes fermented but isn't bubbling as much. I left it out at room temp for 2 nights. Is it ok? Did I do something wrong? Any suggestions 😢😢 How long after eating kimchi everyday will I see results with gut health and skin issues.? I have been eating it with eggs for breakfast for the last two days.

Yes me too I had awful heartburn had to be on meds now I eat Kimchi I'm off the meds and don't have heartburn but have to eat it everyday

Gonna show my age here, I was in KOREA in the ARMY in 84-85, spent over a year there, learned about KIMCHI back then and loved it...... Just started eating it regularly and ummmm it keeps my "regular" one could say..... lol.... It's good stuff, learning to make my own now....

So i was experiencing abdominal pain where my liver is located, i used to be a heavy ass drinker, lazy, bad diet. I recently started going to the gym, more often lately, began strength training and the pain is gone, ive included kimchi in my diet, i eat it every day, i eats lots of lean meat such as chicken and fish, i eat rice, veggies, eggs etc. it really does work, i love kimchi and plan on eating it all the time

Never even heard of this until a few weeks ago so I immediately bought some from our local grocery store. LOVE it. I probably eat some every other day now. I'm guessing it tastes even better from an authentic Asian market/store.

I love kimchi, I just randomly bought it at whole foods months ago and I love it. I just eat it by itself. It is quite costly when the canister says "17 servings" but to me thats only 5-6 servings. I should probably figure out how to make my own. It does seem to help the stomach/digestive system though when I have it.

Go to a Korean or Asian grocery store! You can usually get a gallon container of it for less than what you would spend for a quart at a big grocery store

Try and make it. It’s not that hard and you can make it healthier than the stores. Like a lot less sodium. Even just using regular cabbage it’s really good. Also cucumber kimchi is sooooooo good

Kimchi is so damn good! Not all Kimchi is created equally! If you find an Asian market that makes a good batch, you are in luck! I have a spot and it is the absolute best kimchi

On day 4 of eating fermented foods, starting with sauerkraut and the Kimchi today. Trying to lessen anxiety. This morning I had more mental clarity and less self speaking in my mind. I’m a fan now and it’s delicious.

I wanted to like kimchi soooo bad, because I kept seeing it all over social media and hearing about the benefits and how delicious it is. So I bought some from my local American supermarket and also from Trader Joe’s. I was HORRIFIED! It tasted SO SO BAD! I thought, “What?! There is no way this tastes so bad yet is so popular. Something isn’t right.” Yesterday, I finally went to an authentic Korean restaurant for the first time and tried their kimchi, and let me just say: WOW!! My mind was blown! My life is forever changed! Hahaha…I cannot explain how DELICIOUS it is!! It tasted NOTHING like the terrible knockoff American supermarket kimchi’s I had in the past! I am so so glad I discovered the authentic kimchi from the restaurant, and I am officially a fanatic. I purchased a big to-go container of their kimchi, and I will be back for more!

i am asian and tried going on keto, ate lots of salad starting in my 30s for health but the raw greens dont agree with me. I get constipated. Going back to my roots and eating kimchi, tummy feels much better lol

Here’s an easy recipe; Napa cabbage Radish Onion Carrots Fish oil Korean red pepper to taste Salt, 2.5% per weight of cabbage only Garlic, ginger to taste Vacuum pack, place in cabinet near stove Kimchi in 3 days Add or subtract veggies to taste, I’m adding cucumber.

I've made kimchi for years, always make it differently each time. I thought the flour paste was so it's spread on the leaves better and for the bacteria to feed on. Whatever, I make some and put it into every batch. I chop it up and save the very green tops of the Napa cabbage for salads so every bite is crunch.

I make a fermented vegetable version sometime like kimchi sometimes just water and a little natural salt and this last batch has tumeric..I have even been drinking the liquid out of the crock too lol

Great video on kimchi! Interesting that it has a beneficial impact on your microbiome! Crazy how that impacts obesity and improves your health! Its unfortunate that people try saying that veggies are bad for you in the "Animal- based community" vegetables are very important for getting minerals etc... in the diet. In my opinion

Wonderful that you're promoting fermented food 💞 I too am a fermenter, and the benefits are amazing AND healing. Just self researching, I use all these fermented foods to put Crohn's into remission.

Me too! I got into fermentation when I was diagnosed with ulcerative colitis years back. My favorite thing to make and eat is kimchi. I truly believe it has really helped my condition. The best I ever felt was when I was consuming homemade kimchi everyday and I was in remission for 3 years during that time and had never felt better. I got lazy with my diet and went quite a while not making or consuming kimchi or any other fermented foods and I had a flare up. There really is something to this superfood. Of course kimchi alone won’t fix poor food choices but wow it does a lot for a person. Thanks for reading this 😅

Usually, they are already fermented. Or you can leave it out for a day so if you don't think it was fermented enough. Best, Dr. Jin

Back when my children & I had a large farm & kept a very large vegetable garden, we had a super-abundance of cabbage. Which is when we started making sauerkraut in large quantities & canning it for winter time storage. Do you think that sauerkraut has all the same health benefits as the kimchi?

What we are being told about salt being bad for us is WRONG. Lots of studies are proving this. The salt is kimchi is GOOD for us. Or keep believing your dr. If you are a salt restricted diet please do more research. Our doktors are killing us with their ignorance. Dr Berg, Dr Hyman, numerous docs to follow out there.

Stomach cancer rates are high in parts of Asia, especially Korea, and studies do indeed suggest that at least part of the reason may be all the kimchi, miso, and pickled fish people eat in that part of the world. Those foods contain N-nitroso compounds, which are likely carcinogens.

Why does kimchi only take 1 week to ferment and sauerkraut takes longer? Surely the longer it ferments, the more health benefits? 😇

You can ferment the kimchi for longer than a week. They usually will ferment for 2-4 days at room temp then refrigerate to slow down the fermentation process.
