Wonderful playing, I'm a guitar instrumentalist/fingerstylist just getting into Uke, can you tell me where the baritone Uke range lays (e.g., middle C, etc.), I'm planning on using the traditional GCEA tuning with a high octave G

Bariton ukes are usually tuned DGBE, with a low D, the same as the top four strings of the guitar.

I think that there are strings that you can use for GCEA (even with high G) on a baritone ukulele. But on the other hand, the whole point of a baritone uke is to sound lower than a tenor. So the tuning is dropped down by a fourth. The scale length makes it difficult to keep the GCEA tuning. Whether or not you use a reentrand tuning with a high top string on a ukulele is a question of personal preference and of tradition, but baritone ukes seem to have a low top string most of the time.

I agree with Lisan. Kimo Hussey is one of the legends of the ukulele and has a unique style of playing. Obviously you do not understand that. Also, an absolute beginner cannot arrange such a piece on his own.
