Try to rationalise it like this: the Brontosauruses represent an extra-large pizza and the humans a medium pizza, however the extra-large pizza's in a locked briefcase whereas the medium pizza's in a cardboard box. The V-saurs would expend far less energy trying to kill a human over one of those massive Brontosauruses, and it'd be enough food for the individual dinosaur eating the human.

The point of going after weaker members of a herd (that is the young, the sick, and the other metaphorical cardboard boxes) is to expend as little energy as possible and to avoid injury, true, but once they've started a stampede that point is moot. After that, you can either take the smaller prey and have to hunt again and relive those risks sooner or go after the literal feast and have weeks or months before needing to hunt again. Any predator would go for the feast and let the small fry go rather than take more risks for the smaller meal.

They utilise the ruins to herd their prey into a specific location that could help them kill other members of the herd with no escape, utilising the ruins to act as traps, and as shortcuts for the predatory Dinosaurs. To put it simply, what make these Dinosaurs stand out from any other animal on the island, is that they instinctually use the ruins of the ancient civilisation, to their advantage

I once asked the legendary special effects animator Ray Harryhausen about this remake. He was very diplomatic about it, but after a few more questions he did say that he thought the stampede section was too long. I quite liked it, and the CGI was ok, but it's the merging of the actors that let it down in places. It looks unreal, like they've been pasted on. Which of course they were! But not very well done. If they decide to do another "Special Edition" I hope they sort this out.
