Excellent recipe, I am a Texas and I approve this message. King Ranch Chicken Casserole is kind of like Mac and cheese, there are thousands of versions out there, so make it the way you like! I am going to try your version in the next couple of days.

Jack, you exhibit your passion (look it up) comes through in every one of your posts, I wish I had found your channels years ago! As I have said, YOU have rekindled some of my lost love of cooking, I don’t think I would ever have the drive to do it as a living but as far as cooking for family and friends, you are a great “fire poker”! I’m gong to take this to my brother for dinner tomorrow! He is a great cook that says I am better than he is but, since his stroke, he can’t do much. I worked in the restaurant/catering business for 10 years after college and I must have heard the "never trust a skinny chef" a hundred times. They need to make room on Mount Rushmore for Daddy Jack. I have made over a dozen of his dishes -- pure heaven!

Daddy Jack, you make everything taste good. I gotta admit, I got worried when you pulled out those Doritos. I was gonna call these "Gringo Chilaquiles" but they came out looking quite amazing. Maybe add a little bit of avocado on that too. Delicious. And I LOVE your use of green onions. No doubt, I use green onions at least three times more than I used to because of watching you all these years. They add a great finish. Thanks Jack. Please keep it going.

Chef Jack: quick ?, when you are cooking with Marsala, do you have a specific brand name marsala that you get at the liquor store that you prefer over others?? Is it dry or sweet? Love your show. Allow me to make a gentle correction, the King Ranch has no connection or makes no claim to the recipe. No one really knows from where it came, but if anyone is interested there is a pretty good article about it in a past Texas monthly magazine, January 1989 posted on line.
