In the 5th example at 31:01, why not rather rook captures Knight and after Queen captures rock knight to f3, forking the queen and the king, forcing bishop to take on f3, than queen takes bishop? There is no stopping checkmate with queen g2 on the next move is it? Or am I missing something?

Hi, thanks for commenting. Yeah, he can defend in that case by moving the bishop, I guess to e3, this clears the 2nd rank and White Queen protects g2 (and btw it's also attacking Black Queen with the Rook).
