In my area (central PH), we call that type of pancit "bam-i". Here are other general pancit variations: Bam-i = glass noodles + egg noodles Bihon = thin rice noodles Canton = egg noodles Misua = wheat vermicelli noodle Sotanghon = glass noodle (soup) Mami = egg noodle (soup) There are others, but the list would never end lol

Filipino sweet potatoes come in white, purple, and yellow (orange). Glad you enjoyed the food from our culture. The pancit you ate is a canton-bihon, which is literally the name of the noodles themselves. There is also miki-bihon which features a thicker version of the canton called miki noodles. The regular canton version will have a thicker sauce since it does not get fully absorbed, which is why the bihon is included sometimes since it soaks it up.

I'm no pork eater since childhood because I don't like the fat of pork and the taste itself. But there's a restaurant here in the Philippines called "Giligan's" and they also serve pork sisig, and man, it's dangerously SO GOOD! Because even I myself ate the sisig! You cannot taste the fatty texture, it's crunchy (chicharones), and flavorful! I was so surprised at myself! 🤤

Ohh gush from not eating pork to jumping into sisig already. Sounds like angel singing Hallelujah 🤗 glad you like it.
@clyder46
@clyder46 Жыл бұрын
It's not because it's Giligans, it"s because sisig is mainly made from pork ear and face where there's barely any fat 🤷‍♂️
@juris1827
@juris1827 Жыл бұрын
@@Airia_11 Giligan's sisig for me is really delicious hands down! It's crunchy type of sisig that's why I liked it. If that sisig is soft or taste so pork fatty, I cannot eat it, I tend to vomit automatically because of the fatty taste of the pork, for my palette it's like very fishy taste and not fresh, you know what I mean? I'm not kidding, since I was a child I'm already like that towards pork. But at Giligan's, man, that's the only time I tried sisig all my life and it's worth it! 😋
@juris1827
@juris1827 Жыл бұрын
@@clyder46 not really, in my family, I'm the only one who don't eat pork at all since childhood. Mainly because I don't like the very soft texture of fat and its own taste of the pork for me is like "very fishy" or sludgy for my palette. All foods that have that kind of "fat" whether it's from chicken (its skin), beef, even on shell fish itselfI really don't eat it! That's why all my life I only eat white meat, not the red ones especially when it's cooked like soup or stew type of dish, a big NO for me! The only exception that I can eat a pork is when it is a chicharon type (the VERY VERY CRISPY PORK BELLY FROM INSIDE OUT) because no more soft areas of fat, all are already crunchy. And in addition, FYI, I already saw many types of sisig my family ate so far when we're eating outside, that's why I'm familiar with the "common texture" of that dish which is fatty, oily, kinda soft from its fat and bits of cartillage. I tried tasting those sisig like a bit only but 👎🏼, I tend to 🤢. I KNOW ALREADY IT'S NOT FOR ME. But when the first time we ate at Giligan's and out of curiosity tried their sisig if it is crunchy, IT PASSED FOR MY PALETTE! That's why that's the only sisig I appreaciated to be honest. I didn't puke or anything. It's not "fishy taste" or sludgy taste on my palette too! That's why I claimed that Giligan's is the best!

Some bicol express recipe lessen the spiciness because many can't handle or enjoy. If you want to try authentic version, you may want to come in Bicol Philippines. I love how, as you progress with Filipino food, your use of utensils also progress to how we Filipinos use utensils. The 1st video uses a fork which isn’t the best at scooping the food, we only use forks to push the food onto the spoon. With the 2nd video you use a spoon but an itty-bitty one so yo had a hard time getting the right amount of food in your mouth coz it kept falling off the spoon, but now you are using a big spoon which allows you to grab a bigger bite of the food. On the next video, I wouldn’t be surprised if you start using spoon and fork like a true blooded pinoy lol.
