Pinangat na Kitang / Amaral Fish Recipe
6 pcs medium size kitang
2 cups water
80 ml calamansi juice
4 cloves crushed garlic
2 pcs chili
2 pcs sliced tomatoes
1 pc sliced onion
2 thumb size sliced ginger
1/4 cup cooking oil
1 tbs (or more) fish sauce
1 tbs (or more) salt
Procedure
1. Heat the pan. Pour in some cooking oil.
2. Sauté onion, garlic, ginger, & tomatoes
3. Pour in some water. Let it simmer until the tomato softens
4. Put the fish slowly one by one. Add some salt, fish sauce, & calamansi juice. Let it simmer for about 10 minutes.
5. Once the fish is almost cooked, put in the chili. At this point, you may add water and calamansi juice depends on your taste. Let it simmer again for another 10 minutes and we are done.
6. Put in a serving plate and serve with cooked rice. Enjoy
