It is CLEARLY indicated in the manual that number 2 is the speed for heavy dough. I wonder why did he set it to higher than 2. kneading bread should be slow.

KA really got the heat when they switched to plastic parts on some of the models. They quickly changed back to metal. It's holding up fine. I expect many many years of no issues.

Ignore the Trolls posting negative comments, I rather enjoyed the video and thank you for posting it. Too many people come on here and post negative comments and have no videos of their own so kudos to you for putting yourself out there. If anyone walked into a traditional bakery with the attitudes here, they would be chased off with a bread paddle. Only suggestion, never go beyond 2 when mixing bread doughs, the gears can and will strip out over time. Thanks for the video and keep it up. :o)

Interesting machine. Never put salt with flour at the beginning. Stops the formation of the gluten. Mix slowly for 10 mn because gluten develops better at low temperature then turn up the speed. Your dough should be at 24 °C. At your salt almost at the end. Might help someone.

It is hard to find a good product nowadays. I just purchased a Kitchenaid, and I hope to live up to its reputation. So far, from my research, is the best on the market ...

What is the model #? Is it: 4KV25H0X? You didn't remove the bowl full of dough. Is it difficult to do compared to a tilt mixer? I would have liked to see that because with a tilt head mixer obviously the mixing attachment would be lifted out of the way.

The KA with the 325W motor are fine as long as you don't do a big batch of dough. IMHO for anything else they are perfectly capable as the higher wattage motors.

Did no one want to discuss something more important, rather than if it's ok to put on videos as he likes, which is apparently legal and not bothersome to anyone anyway? The not adding oil part... I think if you spread some oil on top of your dough at the end, after second rise and before actually baking, it's going to enhance its crispiness! It's like deep frying, except you're only using (and consuming) this small amount of oil. I've never tried this, but theoretically it seems quite credible.

Thanks the video was fine.. My comment is on the machine.. It seems that it does not touch all the mixture at the bottom of the bowl.. As far as touching the mix a pro baker has told me that it is the only way you will learn when you have a good dough for any type of baking..

For bread dough you really shouldn't turn your mixer higher than speed 2. Also if you take your time adding your water then you won't have to do so much of a balancing act, meaning add flour then add water, then more flour again. Add the water in gradually and if you need more flour add it gradually and give it a chance to mix in before deciding whether to add more.

For the engine does not burn it is recommended to use no more than 600g of flour, and speed 2.

I think people will be more vocal when stuff go bad. Do I think they are making stuff as good as they used to ? Probably not. I don't think there's a better alternative at this point. They are still the market leader.

Search for "New Metro Design Beater Blade review" on my channel. That should solve your problem. Also this mixer has an adjustment to the height of the bowl using a screw.

When you scoop out flour from a bowl or bag do you really think that you don't touch any of it? LOTS of people still knead dough by hand (stand mixers are quite a luxury - oh, and people at Papa John's knead pizza dough by hand) so again - I still don't see the big deal about the guy touching flour in the bowl.

I came here to see the stand mixer in action - which is what this video shows. The title does not say "best bread recipe in the world" - the guy is just trying to show how the mixer looks/sounds/works when mixing a dough. I don't know why people have "cringed" when they saw this man touch the flour in the bowl. He's not working in a restaurant, he's at home cooking his own food. I don't see why touching the dry flour of his own bread that is going to be cooked anyway is such a big deal.

What's the big deal? Sometimes flour that's being scooped out of a bag or bowl gets touched by human hands. He's making his own bread - that's going to be baked. Think about cooks that HAND KNEAD their dough (Papa John's comes to mind) - they have to TOUCH the flour (heaven help us!), spread it along the table so the dough won't stick and knead it - by HAND. Touching flour is NOT a big deal - many recipes (whether you use a stand mixer or not) require that you touch flour. LOL @ such silliness.

babyzzz65 Im an average joe learning to cook and have also invested in a pro 600 series mixer. But there is a difference in being a beginner who takes care of his things versus being completely irresponsible and neglectful with your new equipment. So when this mixer is broke down from kneading dough on speed 8 I’ll still have my mixer working just fine all because I took some time to make sure I followed directions. But hey maybe this guy can Afford a new 300-400 dollar mixer every year or two!

Please tell me KitchenAid did not give you a free mixer to review. This is terrible and I cringed watching you pour flour in the mixer then for some reason reach in and touch it.

You should speed it up towards about 456 you should speed it up!

You guys don’t know what you’re doing at all and clearly do not know how to operate the mixer. You never go higher than speed two for kneading dough of any kind. This will cause premature failure of the motor or transmission components in the mixer. Plus it will over knead the dough causing the gluten to break down.
