In Billy's defence it also has to do with delivery, when people feel under attack they shut down. It's a credit to Billy that he could get past Gordon's delivery, take the help and make the change. Really good to see.

There are so many important lessons that can be learned in this series from Gordon Ramsey. The big one is, put away your ego and stubborness and listen to experience, and someone with a proven success. It's a tough business to be in and personally I don't see a bright future for the restaurant business, seeing that the Middle Class is being squeezed out of existence. I can no longer afford to dine out. Thirty years ago I ate in a restaurant three times a week.

Ive had my share of rough teachers. My dad and a home tutor. My dad chewed my ass out because i couldnt get my zeroes "0" long and straight enough and they looked too much like O's. The other hone tutor said that i would never succeed in life or ever pass maths and made me cry, never had i loathed someone at that level. Funnily enough, i got a 91% on that maths test that came afterwards and my handwritings worse than it ever was. Moral of the story. Ummm. Idk, people who really shout at you have their own reasons, always empathise and put yourselves in their shoes. They may be shouting to vent, shouting due to personal problems, shouting because they wanna bully gou or they may actually be trying to help. So make sure you figure it out, stay calm. Dont cry. And most importantly. Communicate without fear. The people that are the hardest to gou are most often the people that are the best for you.

Kitchen nightmares ain't so much about the food. It's more a 5 day management class. Information and structure. The PoS system he gives a lot is arguably the best thing he does. It gives a clear picture. A lot of owners open a place becouse on a social scale they are great but on a management scale they don't cut it.

Owner operators are the problem in soooo many ways. They overspend buying fixtures, expensive wines, cutlery, linen etc. Then once they get close to opening they decide " we can run the resturant" (and cut out the manager/salary) . Next; chef's that are welllll NOT chef's. They start strong, then lose customers, high kitchen/staff turnover, stop paying bills, before you know it bam out of business.

When a person dies of cancer at a younger age, one has to look into WHAT happened 10 years before. Medical research has shown that a crisis, a shock, a huge disaster can come on 10 years afterwards. In this case I believe it was 8 years after Gordon's visit...but maybe the initial stress occurred a few years before they finally got Gordon Ramsay to visit. As we could plainly see, Billy seemed to be severely depressed...even during the revisit. It's sad and I feel sorry for his hard working, well meaning wife. Is she doing okay?...
