Mid-rare is the default temp for steak/beef in fine dining restaurants...have you ever watched Hell's Kitchen? He always expects the chefs in challenges to cook their red meats mid-rare and most of the food they send out is cooked at that temperature unless otherwise specified on the ticket e.g. wellingtons, lamb, steak.
