Great demo! I'm personally a fan of a basic vanilla white cake. I think vanilla gets a bad rap for being "plain" but it is truly a delicacy and a simple pleasure.

My kids have severe food allergies to gluten and eggs, so our favorite recipe is Cybele Pascal’s allergen free chocolate layer cake from her wonderful book “Allergen Free Bakers Handbook”, without which my life as a parent of these kids would have been much much harder over the last 15 years. This cake recipe is so good that people who have never needed gluten free or egg free recipes exclaim that it’s better than most “regular” cakes they’ve had. I have more than once heard, “I expected to dislike this, but it’s the best cake I’ve ever had!”

I used to make wedding cakes and my base recipe was a lemon poppy sour cream pound cake, which was a modified creaming method cake. I modified it to make different flavors such as orange-almond and others. Because it was eaten so soon after baking, I never thought that it had any staling issues, but i would love to make it again to see how these ingredients inhibit staling. Thanks for the videos

Happy Birthday! Those seem pretty dang neat, stale cake is pretty sad and if this can extend the life of the cake it'd be pretty good to get. As far as cakes go, my favorite is just a plain white cake with a thin buttercream frosting. With a glass of milk or some vanilla icecream it's simple but pretty fantastic.

My favorite cake is a hazelnut sponge cake with a hazelnut praline swiss meringue buttercream. It is so light and delicate and has an amazing flavor. First time I made it was for my father's birthday and has quickly became my goto party cake because it is just so good (even though it is a pain to make lol)

I like experimenting with different flavors. I prefer to make genoise layer cakes. I’m not sure which additive that makes me a better candidate for, though. I struggle with frostings. Maybe that’s because of my very dry and generally cold kitchen? It’s not the high altitude. As for flavor, I like to use herbs to mix things up a bit. Lavender is probably my favorite.

Favorite cake is a simple lemon bundt. You mentioned the differences between the lecithin/GMS/SSL, but is it possible to combine them? For instance the SSL for evenness and lecithin for some added moisture retention.

Yes, but you'll have to play around with ratios to avoid overdoing it.

Favorite type of Cake: Carrot Cake. It would be interesting to try to use an emulsifier with a carrot cake, since oil is used instead of butter, and carrot cakes have a tendency to be somewhat oily. I wonder how it would impact the crumb? Similar with a Red Velvet cake.

If we we looking to make a cake that we can freeze, for example for the base of an ice cream cake or inclusions in ice cream, would you recommend leaving emulsifiers out? I assume it will freeze more tender with out the water retention.

Leaving out the emulsifier will cause the thawed cake to stale faster

My fave is my grandmother's chocolate sheet cake. It's no where near as good the next day though so your lecithin might be the trick. The chocolate ganache frosting skins over. Would one of these help prevent that?

I'm partial to Blitz Torte, a simple yellow cake with a meringue and slivered almonds on top, then a custard filling between layers. Now that I eat Keto, I have to experiement making this low carb.
