The German Black Forest Cake or "Schwarzwaelder Kirschtorte" is a staple cake that tastes good year round. You can never go wrong with whipped cream, chocolate and cherries. In this video I share how I make this staple German cake and some tips and tricks.

Chocolate Sponge Cake:
6 room-temperature eggs
175 grams sugar
1 pinch of salt
150 grams flour
25 grams cornstarch
25 grams cocoa powder
1/2 teaspoon baking powder
Kirsch Simple Syrup (with alcohol):
20 ml water
20 grams sugar
100 ml Kirsch Liqueur / Luxardo
Kirsch Simple Syrup (without alcohol):
100 ml water
100 grams sugar
Cherry Filling:
1 glass sour pitted cherries
30 grams sugar
30 grams cornstarch
1 pinch salt
Juice of 1 lemon
Cream Filling:
750 ml heavy whipping cream
1 teaspoon vanilla extract
4 teaspoons sugar
3 packages Sahnefest / Sahnesteif / San Apart
For Decorating:
100 grams grated chocolate / chocolate shavings
