Sebastian's menu concept is literally the customer trying to blend a flavor together hence the "20 combinations". So if it tastes bad, It's the customers fault for blending the wrong flavors together.

which is why the menu concept is stupid and also helped screw Sebastian over because if a customer does order a bad combination, then they'll likely leave thinking the chefs didn't do a good job and/or return the food, either case Sebastian loses because he either loses future customer(s) from a possible bad review and/or loses immediately because the customer didn't like the food and won't want to pay for something they only nibbled on. It's understandable why Sebastian wanted to give customers flexibility with how they want the food but it also shows laziness that he doesn't know how to do recipes.

I've read somebody said its more about the personal responsibilty and an actual training. USA is a huge country with a shit load of people and very mediocre education. It seems theres a general schism between US and Europe in how people approach business such as running a restaurant. In us show these people are extremely entitled, ignorant and self centric. THEY wanted a restaurant so they HAVE a restaurant. And theyre geniuses and incredible and their food is immaculate. Meanwhile most of them probably don't even know how to put out a burning oil pan. They don't know to not wash the chicken in the sink, to not put raw chicken and cooked chicken together (this one episode.....) they don't know to keep separate utensils, tools and pans for clients who have severe allergies. Theyre just people who one day decided to have a restaurant and they didn't think to get anyhow prepared, because how hard can it be? Its the equivalent of this one guy saying a funny thing few times, and he took it way too seriously when his buddy told him he's should be a comedian.

It's worth noting UK restaurant regulators are much stricter in the UK than in the US. You get surprise visits, regular checkups if you've previously received warnings, etc. It's why the fridges in the UK version rarely had any issues. I have absolutely no idea why the US doesn't do this side of things properly.

The cockroaches one, it doesn't give you a close enough look at them but I'm pretty sure they're german cockroaches. Damn things took a total of 7 visits from an exterminator to clear from our home as they just breed to fast and are immune to so many control methods. They are one of the few pests where there are 0 non-chemical options as they've developed immunity to all of them.
