What do all those numbers like CPS2 and N163 mean? Are they codes for which instruments should be played?

They identify the hardware that is being emulated. CPS2 stands for "Capcom Play System 2", which is the arcade board games like Super Street Fighter II and Marvel Super Heroes run on. The N163 on the other hand is an expansion soundchip made by Namco for the Famicom. They've used it in some of their Japanese releases, it's embedded in the cartridges.
