You have 2 options, here I have used saffron food color mixed with water. But, you can use kesar (saffron) mixed in hot milk too, which I had used in my previous Chicken Biryani recipe

Another well-explained recipe. I came across your channel by chance this morning and i am watching them all continuously since then till now. The background in the intro is so green and peaceful, which city/town is this? Nice to see so much greenery. I'm from Bangalore and the greenery i used to see in my childhood days ( my memory is intact from about early 1972) is now all but disappeared with trees being cut down recklessly to make way for broader roads and new buildings.

I am from Kolkata, the background is of Barisha (famous Sourav dada's nearby locality). Yes, our locality is still green, but slowly concrete structures are replacing it! I myself never visited Bangalore, but husband had visited Bangalore, he mentioned traffic wise the main city is total chaos during office hours.

@@SalmaTheChef Yes, that is what i noted in all your videos, you take so much trouble to reply in-depth to each question. In my case, you so patiently explained the brand of rice even though the video had it in so much detail. People watch these videos so that they can learn and try at home, especially beginners and amateurs like me. And if they get stuck with even a small doubt they won't have the courage to try the recipe. Lots of other channels they just put up half information and then don't bother to read or reply to the comments, which defeats the entire purpose of viewers watching the video in the first place. But you are so different, i am wondering why though you started your channel more than 5yrs ago, i discovered your channel only yesterday. Better late than never. Looking forward to more videos from you. and once again thanks for all your videos and the care and detail you go into for each.

দিদি আগেই বলেছি তোমার শেখানো মাটন বিরিয়ানি রেঁধে দারুন প্রশংসা পেয়েছি তাই এই রেসিপি টা দেখে কিছু প্রশ্ন এসেছে মনে 1. এটা কি মাটন এর থেকে অনেক শর্ট এ শেখালেন? 2. বিরিয়ানি মশলা টা এখানে কেনা না ঘরে বানানো? যদি ঘরে বানানো হয় তবে 2 রকমের না কেনো? 3. কেশর দুধ বা আরো কিছু উপকরণের ব্যবহার কি দরকার নেই? 4. আমি কি মাটন এর রেসিপি অনুযায়ী বানাতে পারি না এটা follow করবো?

Thank you for your query. এটা অনেক আগেকার ভিডিও। আপনি মটন বিরিয়ানির process টায় চিকেন বিরিয়ানির ক্ষেত্রে ফলো করবেন। শুধু চিকেন টা pressure cook করবেন না, কড়াতে রান্না করে নেবেন। আমি পরে details এ একটা চিকেন বিরিয়ানির রেসিপি আপনাদের সাথে শেয়ার করব।

Sorry for late reply. 3 joner jonno banate holeo apnake 500 gram rice i nite hobe (video te jemon dekhiyechi). Karon 500 gram rice e 3 theke 4 jon khabe. Mangsho ta ektu kom nitey paren, 750 gram chicken neben. Refined oil ektu kom neben. Mangsho marinate korar samoi nun o lonka guro ektu kom deben, mane swad onujayi adjust kore neben. Baki moshla o process aki thakbe jemon video te Dekhiye chi. Ghee ja bolechi tai thakbe.

Recipe actual.1.Heat kadai first.2.add ghee to kadai.3.heat the ghee.4.add whole garam masala(cardamon,bay leave,cloves,cinnamon,javetri) to ghee .5.wait for whole spices to crackle.6.add sliced onion to ghee and saute with garam masala.7.after onion turns light brown add mutton(which should be kept in salt water for at least 30mins and then dried).8.saute mutton for 5 mins.6.after that add chilli powder(yellow or red),pinch of kalimirch,ginger garlic paste,salt,pinch of Biryani masala1(javetri elaichi powder),Biryani masalA 2(cinnamon,shahjeera,jaifal,kebab chini,black pepper,starannise,fennel seed powder mix) and saute for 10 minutes.7.then keep the mixture in low flame for 5 minute until water separates from mutton.8.after that add curd.9.mix the curd well and then add water.10.cook until the mutton is 80 percent done.11.separate the mutton and gravy 12.gravy should be filtered 13.in pressure cooker boil fat of mutton with salt and water .Keep the stock and discard the fat then .Keep juice aside.14.Rice preparation as normal(in saucepan heat water along with lemon juice ,slight ghee,whole garam masalas and bay leaves ,lots of salt and some keora .Bring to boil.then add presoaked 1hr dehradoon or basmati rice to boiling water and boil rice till maximum 6 minutes and then strain to dry and keep aside.15.now comes mixture part.in a flat lagan or patila add aloobukhara 10 piece and lemon juice of 1 lemon and mix.then add Biryani masalA 1 and 2 and mix.masala 1 should be more 4:1 always.then add the filtered gravy of mutton and mix .Then add milk and mix.then add ghee and mix.then add precooked mutton and mix.then on top add pre fried potato and settle.on that again sprinkle Biryani masalA 1 and 2 and fried onions or beresta.ater that add rice in layer 1.sprinkle gee on top and khoakheer .also add masalA 1 pinch of.Then sprinkle saffron mixed in hot water .After that again add rice in final layer.above the final layer sprinkle remaining milk evenly(mixed with both Biryani masalA 1 and 2 ,chilli powder and salt).then sprinkle the fat juice mixed with ghee evenly.finally rose and keora water and again lemon juice and onion fry on top.finally seal the patila with atta and keep in dum.dum technique for mutton (if small quantity as 1kg for home then 10 minutes high flame and 30 minutes low flame above tawa ,),if big quantity as 6-15 kg then 5 minutes high flame and 15 minutes low flame .Then removing from flame above the lid keep some burning coal and keep for 10 minutes.thats it.

Serve korar samoy, ei tel alpo alpo uporer dry rice er sathe misiye nite hoy. Ei mixing ta na kora holey, porer diker biriyani te besi tel hoye jabe. Sei janno, biryani mixing tao besh gurutto purno. Kichu kichu khetre, biryani sesh hoye jabar poreo alpo tel pore thake.

Thank you for your query. Apni porer bar jakhon banaben, rice ta 80% cook korben ar bhater fan jhoriye neben songe songe, nahole besi cook hoye jabe. Try korben Wagha Royal, Kohinoor Tibar, Nafis, Kohinoor Trophy Royal, ei chal gulo nite. Ei rice gulor temper onek besi. Dum debar samoy, prothome 6 minute high flamey dum deben. Tarpor ekta chatu rekhe, tar opor biryanir hari rekhe 1 min high flamey dum deben (chatu garom korar janno). Er por, flame low kore aro 30 min dum deben (chatur opor). Ete biryanir niche dhore jabe na. Hain stock tene jabe.

Apni 200 ml jol deben, ar high flamer dum ta 6 minuter badole 5 minute deben. Baki dum process same thakbe. Mane, 5 min high flame chatu chara, 1 min high flame chatu rekhe, 30 min ekdom low flame chatu rekhe.

Didi.. this is the third time I tried your recipe in Australia.. and trust me it's great all the time... Absolutely delicious and everyone in my family appreciated it.. But got a few question ? 1. How do we figure out 70 % of the rice is cooked ? 2. The biriyani I s delicious and I HV prepared the biriyani masala as per as your instructions but the taste is still not as same as that of the restaurant but it is absolutely delicious.. Any pointers on the same? Also can you please post the recipe on the restaurant style mutton tikia recipe?? Thanks in advance

Dear Arnab, Thank you for your detailed comment. 1. To identify 70% cooking, you will find the rice has changed colour to white, got a bit elongated. You can press the rice with fingers as it just become soft, the brittleness only disappeared too. 2. There is a second biryani masala, which I only came know after making this biryani. One dear food journalist had shared the information with me. You will also notice the information in the comment threads of this biryani. To make this biryani masala you need to grind together equal amount of mace & equal amount of green cardamom to powder. The quantity of usage is mentioned in my Awadhi Biryani Recipe video (kzbin.info/www/bejne/oZjPmn1_fqmEo6c). Another factor the restaurant is at advantage is the quantity! They always use same quantity of ingredients to cook their biryanis. They may cook 4/5/6 or even 1 patila, but the minimum is 1 & they use same quantity of rice/meat/potatoes/masalas/ghee every time to cook a patila. And they also use same brand of these ingredients e.g. if a chef uses rice from nafis, ghee of shree brand, then this chef will use these brands only and seldom changes the brands. They are also cooking the biryanis for years & mastered it. But at home, we tend to cook different quantities most of the time depending on the guests. So, we need little time to get the combinations right & master it. Their dum (steam) process is little different. They put heat at both bottom & top. On top they use burning charcoal to provide heat from top. Yes, I will definitely share the Restaurant mutton tikka recipe.

Another suggestion is, do not use refrigerated chicken. Try to get the chicken fresh. Refrigerating chicken even for 4-5 hours will change the texture & taste of chicken. it will never taste as good as fresh. This tips also hold true when cooking chicken chaap.

In my later Biryani Recipe videos (Mutton Biriyani, Awadhi Biryani), I referred this as Biryani Masala 1. And I used another biryani masala (biryani masala 2), which is made of equal quantity of Mace & Green cardamom. Biryani Masala 2 is optional & to be used along with Biryani Masala 1

Debi tumi 2 Kg long grain basmati Biryani rice nebe. Ar Chicken/Mutton nebe 4 kg, aloo nebe 2 Kg. Baki masala adjust kore nio (more or less x 4 with reference to this recipe)

Amra sakoley restaurant er mato biryani banate chai, ei khuti nati ingredients restaurant e use kore, jeta amra barirte miss kori (ojante). Apni na chaile na dite paren, tobey na dile taste kombe. Dile abossoi better. Amar ei biryani recipe ta, Kolkatar ekta famous restaurant er recipe, amar instruction mato apni ektu try karun, dekhben khub valo hobey.
