Biryani arrived in Kolkata through the Nawabs of Lucknow
It is an evolved lighter version of the aromatic Lucknow Biryani with less spices keeping in mind the humid weather of Kolkata compared to extreme climates of Lucknow
Kolkata Biryani can be had heart full without feeling heavy tummy
Potato is uniquely used which was a exotic vegetable in the Nawab times

onion -300g
vegetable oil total -300g
Biryani masala..
green cardamom 1g-10pcs
black cardamom -1pc
cloves -3g -1.5 tsp
cinnamon stick-6g-3 long pcs
nutmeg -1
mace -3
Shahi jeera -6g-2tsp
rose petals -handful
fennel seeds 2g-1tsp
white pepper -6g-1.5tsp
black pepper -2.5g-1tsp
coriander seeds -1tsp
Mutton marination....
mutton -1.5kg
yogurt -200g
ginger -15g
garlic -15g
birista -30g
biryani masala -15g
kashmiri chilli powder -1tbsp
pepper powder -1tsp
Spice pouch for rice....
green cardamom -8pcs
black cardamom -1pc
cloves -1tsp
cinnamon stick -1 long
fennel seeds -1tsp
salt -48g-7.5tsp
water -3 ltr
For assembly....
birista
biryani masala
khova -100 g
yakhni -200g
warm milk a pinch of saffron -50g
milk -150g
kewra water -5g
rose water -5g
meeta attar-6 drops
ghee -80g
