A while ago, some people in the Philippines travel from Manila to the provinces by ship. The travel used to take 3 days so some will bring adobo & rice with them to eat in between the meals they are served. The vinegar prevents the adobo from spoiling & add taste at the same time to balance the soy sauce & sugar. Some people also let the meat cook for a few minutes in the vinegar first to remove that gamey taste especially that of chicken. You can cook pork, chicken & beef adobo. Depending on your taste, I've seen some people add onions as well. I just recently discovered your channel & I really enjoy your videos. More power! Keep enjoying your stay in the Philippines.

Guys pork sinigang is also easy to cook like adobo the method is boil boil only first you have to boil pork with tomato, onion a little salt and pepper when pork is also soft you can add the veggie: kangkong leaves, string beans, okra, radish steam for about 5 or 10 minutes not to overcook the veggie then add tamarind soup base with gabi ( you can buy that at any stores there) and green pepper (siling pang sinigang) taste it and if lack saltiness you can add some more salt or better patis (fish sauce) that’s it happy and enjoy eating be safe God bless u guys🙏🏻💖🤗 i am a 66 y/old mom from dasmarinas city, cavite, Philippines it’s located nearby metro manila🤗🤗🤗

This is probably the best video you've made as we can see all of the family in the video. All your videos are interesting but having to see who's speaking makes the video more interesting. Mrs. Kim is very comfortable in front of the camera (she would make a good TV host) so as is Mr. Kim and Hyewon & Juwon. We would like to see more of you guys in front of the camera in future videos. By the way what kind of vinegar did you use? There is palm vinegar & sugar cane vinegar. The soy sauce I like to use are either Lauriat or Marca Pina. I also use peppercorn instead of ground pepper and I don't add sugar to my adobo. I also put potato chunks/cubes which I already have fried brown. I discovered your videos a month ago and I'm so glad you're enjoying your stay in Dumaguete. When I watch your videos I feel watching a friend's videos whom I've known for several years and a bit jealous because you show a lot of places I've never been visited! Adobo doesnt have sugar but you can add a little bit of it. Since you put so much sugar, it would be closer to "humba". It is like adobo but it is really sweet. They also say when cooking adobo, after you add the vinegar, let it sit for a while and let it boil for few minutes to cook the vinegar. So that it won't taste too sour. In your cooking, since you add to much sugar, I think it is not sour anymore.

Adobo is pambansang ulam ng mga pinoy! Phil. National menu! More foriegner abroad praises this aunthentic pinoy recipe! Its very easy simply to make! Main ingredient (pork/chicken) Onion Garlic Soy sauce venigar(a little) Bay leaves Ground black pepper Noted: U can put small amount sugar if u want sweet adobo. But take note. The original. Adobo no sugar! The adobo taste Its combination taste of little salty and sour!
@ecilatnecniv
@ecilatnecniv Жыл бұрын
the authentic and basic ingredients of adobo are vinegar and garlic.. yes, no onion.. soy sauce has just been added when the east asians brought soy sauce to the Philippines.. but the spanish accounts original adobo without soy sauce... but since it mixed well, it has been standardized.. i still love the adobong puti or adobong cainta or adobong tagalog that uses patis or fish sauce instead of soy sauce.. also the adobong bisaya or adobong tuyo (dried adobo) for pork variant.. ot has a little bit of soy sauce and cooked on its own fat.. but yes, adobo doesn't have onion.. adding sugar is also a variant and not standard.. the peppercorn, salt, and bayleaf is already given.. but then, again, you can't have adobo without either vinegar or garlic.. and the greatest tip for cooking adobo or should we say the secret of cooking adobo is the lid... yes, the lid... after putting the vinegar, you should put the lid and don't open it until the vinegar is fully cooked (you can tell by the smell). if you have raw vinegar, you cannot cook it no matter how long you put it on fire.. it will taste like vinegar as is.. too sour... 😂

Try marinating the meat next time for like 1hr. Meat sauce ratio = 1kilo of meat 2cups soy sauce, 1cup vinegar, 2 spoons of black pepper seeds, and 5-6cloves of garlic. When your ready to cook it you just add water till it covers the meat and bay leaves. Once half of the water dissolves add 3-4 spoons of brown sugar to thicken the sauce then enjoy. You can also add long beans or potatoes or boiled eggs to your adobo. 🤙🏾

Vinegar and salt were the preservatives that was used back in the old days before the Spanish colonisation. It wasn’t even called adobo yet and soy sauce was not used back then. The Chinese influence is how soy sauce was added and during Spanish colonisation is when the name adobo was given. That’s why Filipinos are masters of making vinegar or any souring agent because they have been using any souring agent to preserve their foods in the very old days.
