Last time I made fried wings, I marinated them in fish sauce and they were fantastic! I also like to use 50-50 mix of flour and starch to coat. It's a nice crunch that doesn't go soggy if you don't finish the chicken and save it for the next day. ❤

Mannnn it's ironic but I grew up in the deep south and could never get deep frying down the way I wanted. I've recreated some of the most popular chef's fried chicken recipes and couldn't get very close to something like Popeye's quality fried chicken back home - and some of those recipes are overly complicated that still result in a pretty basic fried chicken.
