The cocomilk is set aside, while the second and third coconut wash milk with water is used to boil the pork meat with black pepper, ginger and tanglad, wait until it boils, put out the tanglad, let continue to boil until tender , then set aside. Saute garlic, onion, chills , the. Put the shrimp paste before it thickens add the porks with coco sauce. And add green chillies. When it thickens add the first gata/ cocomilk.,et it shimmer until thickens the sauce. Taste it and add salt or patis to your liking. Make a mixture of calamansi, bagoong and red chillies as condiments

There are various way of cooking Bicol Express also the ingredients. We usually put more bagoong and also kamatis or tomato. You can cook Bicol Express even without coconut cream. Authentic coconut cream/milk is I think better. Of course it's salty, it should taste salty for Filipino and super spicy. It's cheap to make Bicol Express here in Bicol because some ingredients like the chili, tomato and coconut are accessible some have in their house/garden some people can ask to their neighbors like for free. Bagoong is like 25 pesos per small cup which is more than enough. Just sharing hehehe I enjoyed watching this!

Bicol Express should be more of the shrimp paste, you should use the whole bottle but you have to wash it first with water and use the strainer, so it will removes some of the saltiness of the paste. The other secret ingredience that you are missing are the lemon grass and the smashed ginger, it might still be taste good without it but it will taste a lot better with both of them. These two ingredience should be always used when cooking with either coconut milk and/or with coconut cream. You also spice it not the small chili that you are using but the long hot green chili and cut it lenghtwise and remove the seeds so it will removes some of the spiciness of the chili. Bicol Express shoul be hot when you eat it by itself and this is the reason why you cannot avoid to eat more rice because rice will removes the hotness and make the taste more addictive to eat.

I Think the coconut you used is for piñacolada drinks it's a rhumbased drinks you mix the coconut milk and the pineapple juice with shaved ice blend it with some pineapple chunks then shake it well and drink it like a milk shakes but way back before when I first went to Korea we used to cook bicol express also but we cannot find coconut milk then so instead we used the vegemil and mix a little bit of fresh milk and the spicy chillies of Korean the chongyangkochu so we get the spiciness of the Siling g labuyo

Here's the actual recipe and ingredients for someone who would like to try: Ingredients: 2 lbs. pork belly sliced into strips 2 cups coconut milk 2 cups coconut cream 1/2 cup shrimp paste bagoong alamang 4 cloves garlic crushed 6 pieces Thai chili pepper chopped 1 thumb ginger minced 1 piece onion chopped 1 piece Serrano pepper sliced 1 cup water optional Instructions: Combine ginger, garlic, onion, Thai chili pepper, pork, and coconut milk in a pan. Mix well. Cover the pan and turn the heat to on. Let the mixture boil. Remove the cover. Stir. Add half of the bagoong and pour around 1 cup of coconut cream and a cup of water. Stir and adjust the heat to low. Cook until the sauce reduces to a quarter (around 50 minutes). Add the remaining coconut cream and bagoong alamang (as needed). Also add the Serrano peppers. Continue cooking in low heat until the sauce thickens (around Transfer to a serving plate and serve with warm rice.

Its the coconut milk first boil it together with garlic ginger and bagoong..when it boils put the meat.. i guess.and i think tomatoes also ..the first coconut milk to put is the last one..there qre 2 separate coconut you will do the pure qnd the light ones that you get .when you compress the coconut or buy in the market

For me : boiled the meat in a water then add salt,black pepper,and ajimoto then after the meat is soft , add the coconut milk, after a couple of minutes add the chilli or other vegetable. taste it if very salty add more coconut milk or water. the aroma should be a spicy.

Look for "Coco Mama Brand" in a Philippines store / grocery and bring it to korea so you can make a lot of Filipino delicacies with coconut milk.

tip: no need to use the coconut milk (the tall carton box) it would be enough the canned one. heres how i make mine.. saute ginger (sliced thinly), garlic, onion, then add the pork (sometimes they boil the meat first) stir..cover for few minutes add shrimp paste, a little water, mix cover. then after 5 mins. add the coconut cream/gata then chillis. let it boil until the meat is tender. if its bland ad salt pepper.

if you really want to try the authentic bicol express you should visit bicol region in the philippines. theres a variety of it depending on the city you visit. There is Naga version, Tabacco, Legazpi and Sorsogon. The spice levels also varies per City :)

When you're saying hi to 1 person, use "kumusta (kamusta) ka". If for 2 or more, use kumusta (kamusta) kayo". Ka is singular you and kayo is plural you.🙂

This way, you have at least a baseline or an idea of the smell and taste of the the dish before trying it on your future episodes. Now that you're in the Philippines, you should make a list of dishes that you'd like to try cooking with Bk when you get back to SK. And if Bk gets to visit you, then you can both do it. I hope you're enjoying your vacation and hoping that you will find new opportunities there so you can stay much longer next time!! Maligayang Pasko at Manigong Bagong Taon !! ps. You should buy authentic Pinoy ingredients while you're in Manila for your cooking episodes with BK. It will be cheaper and will give you authentic results.

Spice in the Philippines is usually a preference, not a type of dish. If you want it to be spicy, you add chilis. Which is why in restaurants chilis are provided, along with calamansi. So you can add it yourself. In home-cooking, you simply add chilis. Most Filipino dishes can be spicy, depending on if you want to cook it that way. Even dishes that are spicy by default, like Bicol Express, can be made NOT spicy. By simply removing the chilis.

bicol express is 60% siling labuyo,25% pork nd 15% pure coconut milk..peper,salt and a bit of sugar to taste and a few green chilis for color.

Yey! It's nice to see you try cooking Filipino foods Sylvia and Bokyung! 🤎 I just want to share my experience with this dish. When we went hiking way back in Mt. Pulag our tour guides were Bicolanos and they cooked very authentic Bicol express for us when we reached the peak. All of us got excited because we loved spicy food but when we started eating everyone went quiet. Haha. It's super spicy like we had to take breaks for every spoon of Bicol express with rice. We often eat this in Karinderyas but the spice of the authentic one is very different. Anyway, kudos to both of you for trying 😊.

Sylvia, if you are still in Manila on your birthday, the 9th of January, you should go to Quiapo Church where the ‘Feast of the Black Nazarene’ is celebrated on that day. It is the largest religious festival of Catholic Devotees. Something really special to experience while you’re in the Philippines. But please don’t go there by yourself…it can get very chaotic and intense!

u need coconut milk and cream that is for cooking plus a bit of ginger and use the actual south asian shrimp paste not seaoujeot (sorry if i butchered this a bit) so u can enjoy the real bicol express taste and fish sauce for the salty component.

Maybe the taste thats missing was ginger I think? I put Ginger when I cook Bicol Express. Then I put 2 batches of coconut milk, I cook the first coconut milk until it becomes like oil, then the 2nd one will be for it to be creamy. Anyways, enjoy staying here in PH Sylvia! Take care 🤍

Probably the miss here is the coconut milk. Considering the coconut milk that was use is a drink type rather the one squeeze from a coconut itself. However that is why cooking is enjoyable you can create anything you want and make it your own. It could be called Sylvia express hehhehehe.
