@8:30 - Well, the bay leafs would normally be tied up with the other whole herbs you don't want staying in the finished product (a "bouquet garni"), but I'd've probably just put them and the peppercorns in a makeshift cheesecloth bag...

That small bag with the bay leaves and peppercorn is usually called a sachet. Similar to the floral sachets that people put in their drawers to make them smell better.

Looks delicious! You can use cheese cloth and some kitchen twine to put the bay leaves and pepper corn in. It's easy to remove after!

I can really appreciate how long this took Kyuho. I've tried to make just the green onion salad before and it's surprisingly time consuming thinly slicing all those green onions! And that is just the side dish lol.

The meal looked delicious. 😍 Kyuho, you need to create a cookbook. Our family gathered all our favorite recipes from my grandmother on down to cousins. We wanted to do it before anyone passed away and the recipes were gone forever. We had our book published through an online company and it has tons of family photos and lots of our best recipes. It’s the one thing I’d grab if there was ever a fire. Seriously, our whole family has a copy and everyone treasures it. But you could sell it to us, too. Hint, hint. 😁

a good sub for a mini strainer (re: bay leaves and peppercorns) is putting them in a piece of cheese cloth or a loose leaf tea bag. As a Korean I give good scissors as a gift all the time! 🤣

@@2hearts1seoul I believe Loblaws sell them... At least those in Toronto. Btw... It's great to learn that you could get most of the ingredients at Loblaws/Superstore. I regularly shop both at Loblaws and H-Mart in Toronto just to get the right meat cut. 🤗

Looks like you can add “iron chef” Lee on top of Dancing Lee! Great job! On a side note, when soaking red meat in water, it isn’t really removing blood, there is no blood, it is actually something called myoglobin, it may look reddish and that has to do with iron similar to blood but it is not considered blood. Those of you that may not be familiar with the reasoning for soaking it in water is to help reduce the gamey taste by removing myoglobin which happens to have iron that gives it that gamey taste.

I always put salt into the water whenever defrosting frozen meats. That will draw out those dirty stuff from the meats.

I have IBS and I can't eat onion >< I looove Korean food but I always make it without onion and garlic (I substitute with green parts of spring onion). It's probably very weird Korean food but it's the only way I can have it. But I think this dish will not turn out great without garlic and onion?

I'm not a fan of minced garlic. Most companies use vinegar as a preservative and destroys the garlic flavor for me.

You're not just getting rid of the blood of the meat when washing it but also of the carbon monoxide which nowadays is used to treat dead meat to make it look 'fresh' :-S

Because it’s far more comfortable to eat! We still boil them for a while with the bones to get the flavor first-then cut the meat from the bones!
