Potato was definitely a key ingredient in the early traditional jajangmyeon recipes found in Korea. Potatoes only slowly disappeared from restaurant style jajangmyeon due meat prices being affordable for the working class. Any respectable homemade jajangmyeon will always have potatoes as well as some type of beef or pork in the sauce. Just thought I'd drop some knowledge!
