That coffee is ancient coffee. Will be different from current coffee to have a sweet taste To make it easy for people in the past to drink coffee

I will recommend you to eat various dipping sauces. For rice dishes such as Pad Krapow or fried rice, we will eat them with fish sauce and chili if they are too bland. If there are eggs, we can eat them with fish sauce or soy sauce. For omelets or stir-fried chicken noodles, we will eat them with chili sauce. For rolled noodles, we will eat them with seafood sauce. For fried food, fried tofu or spring rolls, we will eat them with sweet sauce that is mixed with peanuts and chili powder. As for shrimp paste, it has a strong smell. Some people like to eat it with vegetables or fresh chili with noodles, but I don't. As for coriander(Pakchi), if you don't like it, you can tell the seller not to add it. However, you can eat it as you like without any restrictions. I hope you have fun traveling and tasting new foods.
