How to pair my korg r3 to my Bluetooth headphones

want to know how to preset and save sounds for my gigs on my r3. And patching. Im not sure what that means. Im classically trained so its always been manual. My other band olays mostly blues, SRV, skynrd etc, Also our sound guy keeps turning my volume up and down when I turn my r3 up and down.
