In this episode of Yan Can Cook, Martin introduces us to some of the popular recipes and traditions associated with Chinese New Year, the most significant holiday in the lunar calendar. Have a peaceful beginning and celebrate at home with these traditional dishes including lo han jai, a vegetarian noodle dish featuring mushrooms, tofu, and cellophane noodles (1:58). This dish is sometimes called "Buddha's Delight" because Chinese vegetarian cooking was originally popularized by monks in Buddhist monasteries.(8:01)
Lions symbolize power and strength in lunar traditions. Let's celebrate with a simple lion's head soup, a soup made with pork meatballs. Martin pairs the soup with san choy bow. This lettuce wrap recipe usually calls for pork, but Martin substitutes for shrimp. (9:02).
Martin wraps up the episode with a fish filet for luck and a braised duck's web, his mom's favorite dish.(20:26). Gung hay fat choy!

About Yan Can Cook:
After receiving his formal restaurant training in Hong Kong, Chef Martin Yan immigrated to Calgary, Canada where he was asked to appear in a daytime news program to demonstrate Chinese cooking. Every time my mom and I celebrate Chinese New Year it is a tradition to some friends and family. My mom is actually Buddhist and I’m also too.

A good cleaver, a seasoned carbon steel wok, and a gas stove is essential in every Chinese kitchen. Great cooking show. I grew up watching "Yan Can Cook" as a child in the 1970s. In real Chinese restaurants a seasoned wok is extremely important as the seasoned black carbon (non-stick) will impart a very unique carbon/BBQ taste. Chinese will know this unique taste as "Dragon's Breath."

Oh my gosh. When I stubbled across this on YT I realized how long I have actually been watching food shows!! WAAY before Food Network (which I also watch) but I remember Julia, Justin (the Cajun guy) always GAR-RON-TEEIN stuff, Yan. They were so interesting to watch but Yan and Justin were my favs for sure. The new cooking shows on PBS are really good too. Lidia, Pati, The smoking guy (can't remember his name). I love the travel shoes as well, they're great.

What I like about Martin is that what he does it very typical home cooking for the Chinese. He's really not a restaurant master chef kind of cook, but all his stuff are authentically what you can expect in a more traditional Chinese or Chinese American household.

Lions head soup is actually a really complicated process, making the meat ball involves several techniques and then they are simmered for several hours! This era with microwave cooking seems so insane now! Yan piqued my interest in Chinese cooking apparently 30 some years ago tho!
