I make pumpkin soup constantly, my wife’s coworkers request it all of the time. I love the fall when sugar pumpkins are in season. I don’t serve in the pumpkin however, but it’s a great presentation.

Are kabocha pumpkins available in grocery stores? I'm guessing that the pumpkin sold at Halloween / Thanksgiving might not work well. Other pumpkins or other squashes that might be good substitutes? Acorn squashes for a party of two?

I worked at a co-op that sold them in the winter, but they were always the green skin variety. The shape is the same. Pop just the word "kabocha" in google. Maybe if you see it in it's green form you'll realize you've actually seen them before. Otherwise, it sounds like a mixture of pumpkin and butternut might do the trick.

Pumpkin tends to be quite sweet and less dense than an an acorn squash, so it wouldn't be my first choice for a squash-based soup. But I think the idea is great and it will be an American Thanksgiving hit. I thought the pumpkin would collapse and leak after cooking but it looks great!

That was chicken broth, not stock. There's a substantial difference.
