Honest question - does an extensive to do list or bullet journaling ever overwhelm y’all? New to being more organized instead of just coasting through life like I normally do.

A little bit sometimes. It takes a few tries to find a system that works for you. Some people like really complex systems, other people, like me, use a really simple system. The original bullet journal founder literally just had a system of bullet point list symbols. The fancy bullet journals came from others later.

I've never heard of this, but it looks like a much more structured, linear version of what I use, which is Milanote, so it looks great for people that think more linearly, but my thoughts are all over the place so Milanote works better for me
