Super Idee, danke!

how did it taste? does the scoby make for cool texture?
@KrusteundKrume

Hey, it tastet a bit milder than a sourdough loaf. the texture ist amazing, a bit spongy and it hoilds a lot of water ;)

Can we use something else besides oil? That the only thing I don’t have nor consume
@KrusteundKrume
@KrusteundKrume Жыл бұрын
You can just leave it out if you prefer not to consume it. It might make the crust a little softer and gibe you a little less volume but still great bread! Good luck! ☺️

Thanks again for speaking English. I am following your advice making Sourdough. The Kombucha levain worked really well, but my dough just doesn't rise. The kitchen is at 21°C. Just wondered what temperature yours would be at?
@KrusteundKrume
@KrusteundKrume 2 жыл бұрын
Hey Brendan, our kitchen is at about 22-24 °C. If it really doesnt rise with just the kombucha you can either use more of it or add a little bit of yeast. Up to 5 grams of fresh yeast will help the dough rise. Good luck!

I want this to work so so so badly as I have so much scoby..but failed. My scoby is just not strong enough for direct use as yeast. The preferment or poolish ain't bubbling up well and no matter how long I waited the dough ain't proofing well. I gave extra time and still not working. I supposed it can be great sour dough starter (with feeding) or add some commercial yeast. Just sad.
@KrusteundKrume
@KrusteundKrume 2 жыл бұрын
Hey Kar, so sorry to hear that! If you want to try again, then I#d either suggest, to feed your scabby again before you use it in the pre dough, so it gets more activity. However, you'll have even more scope then... You can also just add a little yeast or Sourdough to the dough, to help the scabby leaven the bread. A bit of cheating is fine ;) Good luck and let us know if it worked! ;)
