Raspberry Tart for Valentine's Day

Ingredients for 12 tartlets or a 26 cm cake tin:
Dough:
6 egg whites
60 g granulated sugar
6 egg yolks
60 g icing sugar
100 g wheat or spelt flour
20 g baking cocoa
Bake at 180° HL for 10-12 minutes.
Raspberry cream:
250 g cream
250 g low-fat curd cheese (low-fat quark)
250 g Greek yogurt
130 g pureed and pitted raspberries
100 g sugar
4 sheets of gelatin
A little lemon juice
Raspberry glaze:
125 g pureed raspberries
1 tbsp icing sugar
